That's because when young Link pulls the Master Sword, it loads another model, which is the same one Adult Link uses. If you glitch in some way or hack the game to make Young Link equip the Master Sword, you'll see that he will the sword backwards, because it was made only to be used in the cutscene where he pulls the sword from the pedestal.
All these years and countless hours playing Oot I never noticed. Excellent detective work into this topic. Even with a 'sword worth of salt' I wouldn't put it pass Nintendo to be this detailed in the little things. Heck MM has a TON of them.

My 6 year old brother somehow did the glitch on the 3ds version mashing some buttons and got the master sword at the start of the game
