I am feeling the need to simplify lately as well. There are items I make sure I keep in my pantry. I have the same type of list. My three veggies on a tight budget are carrots, brocolli and cabbage. I feel like if I have these three I am set and can come up with some delicious meals. Rotisserie chicken and pork roast are my two meat choices as well. So many meals can be made with these two items. Pork bone goes into a pot of beans to add flavor and chicken carcass is used with veggie scraps for a broth. You have great suggestions to make delicious meals on a tight budget. Thanks for sharing.

Simple and inexpensive is the way to go and its so easy to make it healthy also for your particular needs. I'm with your mother in law...soup... I can buy a can of soup on sale, doctor it up with leftovers, extra frozen veggies, beans, etc., and make a fantastic meal to use for a few days. Also make what I call "garbage Burritos" by tossing all leftovers in a pan, add a can of beans and season and voila! Burrito filling that is great once you add salsa and cheese. I've had friends request it for a meal!!!!
Yes your right I always buy pinto beans,rice and canned beef in gravy because you cans put it over rice or make Manhattan's or stroganoff or shepards pie or pot pie.
We date the front and tops of canned goods. We have step risers for a few items. Beans go with beans, peas with peas, etc. Has helped us. New gets put in back. Check pantry ocasionally for what we have used and replensih at a sale price or low price. We do not meal plan. We keep freezer stocked with meat. Aldi helps us so much. Meat we get at local Reisbecks when it is on sale at a good price. Keeping the pantry, frig, and freezer organized and it makes it so much easier and food doesn't get wasted.
You can make a fruit cobbler with 1cup each selfrise flour,sugar,milk, 1beaten egg and 1 teaspoon vanilla,1 stick of butter melted in a 8x8 cake pan ,1can of fruit drained and save the juice too use for glaze pour batter in pan evenly them spoon fruit over batter back at 350 till tooth pick cones out clean from the middle. About 25-30 minutes. And you can even use jam for the fruit.

I like to do Walmart pickup sometimes so when i make a list I find it very helpful that they do a most bought items. Of course, it looks like I have a pet monkey, all the bananas I buy. You are a real role model for anyone who complains about their life being hard with your love for your family and God.
You gave me a good chuckle about the door… I used to do grocery pick up but the reason I don’t like it at least here in New Jersey is they no longer bag anything, they bring the cart out to your car and leave it for you to then unload and put it in your car. It just has become more of a nuisance Than a pleasure.
I've been having too rethink my meals with my son back at home ,cause its just been me for the passed years. Do I've just been making a full meal with lefted over meats. And I know he will eat burritos and that means I have prepare canned refried beans for fast meals, and doesn't like tomato dishes,so I have too find different sauces too go with pastas.
