I stayed in Bihar for almost 2 years. I loved the food there. Specially the traditional ones not the modern ones. But i noticed one thing there, their fish dishes are not that good. It's not up to the mark actually. They don't understand the actual concept of fish. They think that all the nonveg items are ment to be prepared in the same way with same technique which is absolutely wrong. And the one thing that they follow everywhere is that they think adding lots of spices in nonveg recipes makes it more tasteful which is again absolutely wrong. Most importantly, the way they fry the fish until it looks like its burned is totally a wrong concept as it kills all the original flavour of the fish and all its goodness. Fish has lean & delicate meat and should also be handled in the way so that it stays soft and moist unlike chicken or mutton. Don't get me wrong. Im not saying anything bad about the whole food culture. Im only talking about the fish. It might sound bitter to many but im sorry as its the reality.
