Like you, I will take multivariable calculus, ordinary differential equations and linear algebra, but i will have all of them finished by end of junior year (with all A’s, 1550 sat, and AIME quals) Do you think these classes will help a lot in my college apps? Did they help for you?

It is completely impossible for that to negatively impact in any way. i might be stupid but i dont think any school will be looking at your test's
If by "test blind" you mean that they don't look at SAT/ACT tests, most schools aren't that way. But if the tests you are talking about are the ones that influence the grades you have in your classes, then yes, they don't look at those. But they will look at your class grades/gpa.
