I think if you are power users of teams meeting capabilities such as needing the advanced configurations and leverage Virtual appts/webinars a lot there is plenty of consideration for having both. If you are just interested in the AI capabilities, i would say Copilot alone would be what you want at this time.
Can we consider that if we only use intelligent recap in Teams Premium we could drop it an use Copilot for M365 instead with even more capabilities? I'm wondering if I should keep paying for Teams Premium in my use case if I buy Copilot.
If you are only using Teams Premium for the intelligent recap then I would say yes. If you are leveraging and value more of the advanced (non-AI) meeting capabilities such as custom backgrounds, advanced security, virtual appts, webinars, etc. then that would be a different story.
