No, not that much. Harry's pretty much the same quirky person he was in the beginning. He just has a more interesting style of clothing and dance and he doesn't smile as much. But he still has that quirky sense of humor he always had, still does and says random things, tells bad jokes sometimes, is off in his own little world sometimes (which I absolutely love), etc. I honestly don't think fame was ever going to change Harry too much. He's always been a star in the making. Always had that confident, charming personality even before he got famous. Harry is still very much Harry. All you have to do is go back and see him in the very beginning to know that. Same with Liam and Niall and Louis as well. They may have had some hard times, but their personalities are still essentially them. The only one that changed more noticably was Zayn. Zayn just kind of went off the deep end without a flotation device. Maybe not as much as some people do. But he probably changed the most out of all of them, but also you can still see qualities in him of the person he used to be. Anyway, I don't think Fame did as much to them as you seem to think it did. And I don't see how this interview tells you that either.

I agree with you that Harry gets way too much attention for the scope of his role. However I'm sure that Chris Nolan was aware that casting Harry Styles would lead to a lot of additional attention for this movie. Historical war movies are usually comparatively niche, even though the rest of the cast is very high profile and amazing. But still, it's usually something for a specific target group (rather male than female, rather older than younger). With Harry in the mix however there's a chance that people watch the movie, who otherwise wouldn't have bothered and for those people giving Harry a prominent spot in promo is a genius move.
I'm so happy to see whole (not actually whole, but) casts interview. Most of interviews interviewed Dunkirk cast are actually only "survivor" casts, without Barry and Aneurin. I surely understand director and company try not to do spoiling the film by not putting those who aren't survived, but ever since I'm a huge fan of Barry and Aneurin for long time, it hurts me sometimes that I can't watch their Dunkirk interviews more...
Just because the title says one thing, it doesn't mean that none of the actors are being recognized. You want to see that they all get recognition read a critic's review. The station or show interviewing them puts up a title to grab people's attention.
