Went to a hotel in negril that had a whole day jerk hut on the beach, everyone was eating the chicken and left the pork for the people who knew. They were adding the jerk with a big paint brush, best time of my life
The best Jerk is found in Jamaica hands down, though of course some places are better than others. Jerk was created as a way of preserving meat, primarily Pork which is my favourite jerk. Jerk Chicken became popular overseas but many people cook lazy imitations in the oven.
@simcastpodvids: I agree with you. I complained about the chicken being overcooked , too soft and falling off the bone and the girl blamed it on the oven. Now you would think they would adjust the cooking time, but no. Same old mushy chicken. Couldn't even hold the chicken to eat it. So you are right about cheap oven-baked imitations.👍🇹🇹🇨🇦
Finally on one of these shows someone pointed out that pork is the reason jerk exist. Everything else is just add on. I want to see one with Jamaican soup with big chunks of yam and dashine. That's the real heart of Jamaican cooking for me.
To get the best, you have to go to the original source. Even getting jerk chicken here in Toronto, I try to go where Jamaicans cook. Other people overcook the chicken and it gets mushy and falls apart. I hate chicken breast in any form except in chicken spread sandwiches. David, you are right, jerk pork seems to be the best. I don't you hate it when somebody starts to explain something and they stopped halfway because they don't even know the rest of the story themselves the man said jerk pork was the first because of all the wild boars but didn't finish the story that would have been a great little history moment
my understanding is that the tainos had invented the traditional jerk cooking method which was then adapted to the Maroons who were essentially escaped slaves, and they adapted it to chicken. Originally the method was used on local wild boar because thats all that existed on the island. Maroons would transform tough cuts of meat into tender, delicious dishes. They traditionally hunted wild boar; seasoned the meat with pimento (allspice berries), salt and bird peppers (a species of chillies in the same family as cayenne); wrapped it in pepper elder leaves; and finally cooked it in “an underground smokeless pit … roasted over dying embers. They smoked it because they were trying to hide the flames to avoid revealing their location. The open flames would reveal where they were! And hence now we have jerk as it is today!
