So, what is the benefit of using bean paste, rather than buttercream? It looks like so much more work, but that might just be me! Bean paste is used for rice-flour based cakes because they pair well. It is a common pair used in Asians desserts, like mochi and anko (red bean paste), whereas here is rice cake and white bean paste. I haven’t tried buttercream with rice cake but I would think white bean paste would be a better pair. Hope that answered your question!
Oh also there are already premade white bean paste! Just add natural or artificial color and decorate :) plus it is not as oily or buttery as buttercream so easier clean up! And healthier (minus the sugar added for sweetness lol). The consistency of white bean paste is thicker and easier to control for piping.
