I’ve heard of this dish throughout my life but never had it. Being quarantined as well, I realized I had all the ingredients in my pantry so I made it and it was amazing! I had to leave out the mushrooms, I’m severely allergic so I just substituted with water chestnuts and bamboo shoots. Thanks for sharing and I’m so glad to hear you’re safe and well!

This is unusual to me. I have never seen cucumber in moo shu pork. Always cabbage. Also, in my experience over a lifetime, this dish is always served with "pancakes", like thin flour tortillas, which you spread with hoisin sauce before adding the moo shu pork and rolling up like a burrito.
I have very fond memories of moo shu pork. When I was young, I did not appreciate the N. Chinese style foods some neighbores...Mr & Mrs Si...cooked for us. At that time. all restaurant Chinese food tended to be bland, overcooked, over-Americanized Cantonese style (...which gave a bad impression to this style).
But, then, as a teenage, I was exposed to other styles because my uncle Lou lived next to NYC's Chinatown. He took me to a restaurant called the Dumpling House, where I had moo shu pork for the first time. That opened my eyes to northern and Sichuan foods and I've love this dish ever since then. .
