Excellent technique you show by cracking the eggs on a flat surface rather than the edge of the bowl which pushes the shell inside (that’s the proper way we learned in cooking school).

While hard to find these days, I love to use dried lily flowers along with the wood-ear mushrooms. I have a 1000 recipe Chinese cookbook and apparently lily flowers are the traditional ingredient.

My ex-husband used to always get Moo Shu Pork at our favorite Chinese restaurant, but they served it with what they called pancakes, but they reminded me of flour tortillas. And my ex would take the "pancakes" and put the Moo Shu on them kinda of like fajitas ... LOL
I ordered Moo Shu pork from Chinese restaurant and mostly have cabbage in it, NO cucumbers. Yours have cucumbers and carrots and NO cabbage. It looks delicious! Thanks for sharing.

This is unusual to me. I have never seen cucumber in moo shu pork. Always cabbage. Also, in my experience over a lifetime, this dish is always served with "pancakes", like thin flour tortillas, which you spread with hoisin sauce before adding the moo shu pork and rolling up like a burrito. I have very fond memories of moo shu pork. When I was young, I did not appreciate the N. Chinese style foods some neighbores...Mr & Mrs Si...cooked for us. At that time. all restaurant Chinese food tended to be bland, overcooked, over-Americanized Cantonese style (...which gave a bad impression to this style). But, then, as a teenage, I was exposed to other styles because my uncle Lou lived next to NYC's Chinatown. He took me to a restaurant called the Dumpling House, where I had moo shu pork for the first time. That opened my eyes to northern and Sichuan foods and I've love this dish ever since then. .
When I was in Vietnam, my favorite dish was Beef Bok Choy (beef with Chinese vegetables). The sauce was to die for. I wonder if someday you could make. I enjoy your channel and cooking style. The sauce is difficult to reproduce in the West, I have found. Restaurants rarely get it correct.
Once I tried a mushroom in a Chinese dish from a restaurant and they were so sour and bitter I had to spit it out. I wonder if that was a wood ear mushroom?
You must be going crazy after 3 weeks not leaving the house. It's been 2 weeks for me but I still goto the supermarket and my Chinese vegetable shop which gives me some social interaction and relief from the insanity. Also I motorcycle around aimlessly for entertainment. I will try this recipe as I have all those ingredients in my Bing Du food stash from all the panic buying I did a few weeks back. 💪⚘🙄

Same Cabbage , onion mushroom in a dark sauce. The vegetables are cooked throughly
