I have made my cranberry sauce for the past three years like this. I make a couple changes: only White "sugar" with orange zest; two minutes before the end of cooking I add another 4 oz. of cranberries cut in half and 1/2 C. walnuts. I enjoy the extra textures and the family loves it, too.
I found a quick way to make cranberry sauce: in the microwave. After rinsing the cranberries I put them in a microwave-safe covered dish, I don't need to add much water. After only a couple of minutes (or even less depending on how many berries you use) I take it out of the microwave and then sweeten as needed with erythritol. Vanilla and cinnamon can also be added.

Yes, I agree with you. The carb count depends on the amount you eat. I add a heaping teaspoon full of the cranberry sauce to my breakfast chia seed pudding, along with coconut flakes, pumpkin seeds, and a pinch of cinnamon. Basically, the cranberry sauce is the sweetener. Delicious!
I just bought a couple bags Friday. I can't resist fresh cranberries. I used to make a wonderful "crustless cranberry pie" courtesy of AllRecipes.com. I sure do miss it. I might have to attempt an improvisation since I haven't been able to make it for several years. Thanks for the wonderful easy recipe!

To this day I do not know why or remember when he began saying it. I do miss him telling us that. My niece is the one that loves my cranberry sauce (the package recipe) the most and I always made extra just for her. Chipotle and lime sounds really good.

I followed a recipe on Serious Keto who got it from another channel. I reduced the amount of swerve but I did not bother to buy the powder form since the cranberry sauce was just for me, to add on top of my chia seed pudding. I did not detect any crystallization in the cranberry sauce after chilling. I have been having 1 tsp of the sauce in the chia seed pudding every morning for a week now. Still no crystallization.
This sauce is so good - I make it every holiday. I always loved the canned gelled cranberry as a kid. I wonder if that could be made keto? Bonus if it could be set in the same type of ridged can as the original!
You know what I would do? I would google a recipe for the jellied kind. It probably won't be keto but then use my method for making the basic sauce. I am just not sure how much gelatin to add and when to add it. :)

It was such a hit that the batch I made in preparation for last thanksgiving was eaten! so I had to make more closer to thanksgiving. and it can be frozen nicely. my question is if I use swerve (powdered) can I also freeze it or keep it in the fridge for a long time?

Brown sugar is in any better than white sugar. What's the point? I tried to cook some cranberries down in some acacia blueberry juice which only had 12 G of sugar. Substituting brown sugar for white sugar is a joke. It's done

Being there are those like myself who have to go through several videos for a sugar free version that is keto friendly. What we dont have time for is to sit through an entire video if we are told the ingredients at the beginning that dont fall in line with that. Being I came from another short video that stated Sugar Free and they instantly started with Cane Sugar. Sorry but I didnt have time to sort out more than what was said from one's own mouth. Thus I found a vid that incorporated Dates or Monk Fruit with Apples, Pineapples, Cinnamon, Nutmeg, Ginger, and a Chinese Spice to the Cranberries for the jelly. To which is what I was looking for. Completely all natural, gluten free, and No Harmful Sweeteners since I just got rid of my severe bacterial lung infection and chronic pneumonia and needed something healthy I could make immediately. Thus if a person does not want someone to check out then don't start off by saying you use Brown Sugar. That fault falls on your own person. Also just so you know Swerve contains erythritol and oligosaccharides. Do slight research on it. Not really good for your health.

Quite frankly, I don't need people who get their panties in a twist giving me a hard time about the FREE recipes I take my time and money to create.
This is not keto. This is sending the wrong message to someone who is uninformed who may be insulin resistant or diabetic. There is 33 g of carbohydrates in just one third cupof cranberries. No fruit is keto except for raspberries and very limited. On occasion blueberries and strawberries but also extremely limited. This spikes insulin quicker than you can shake a stick. I have no doubt that this tastes good I love all of your recipes but this isn't keto should be labeled lower carb no added sugar.
I'm sorry but your information is incorrect. In FRESH cranberries, a full cup has only 12g of carbs. You are thinking of sweetened dried cranberries, which have added sugar. Please read this www.healthline.com/nutrition/foods/cranberries

Ah.... but if you're using the sweeteners I recommend in this recipe, it won't recrystallize. That happens only when using just erythritol.

If you just use Swerve, it will recrystallize. The combination of Swerve and BochaSweet is best.

Could you use allulose syrup successfully?
It's going to add a lot of liquid so you may want to cut dow on the water.
