I see what you mean about the pasta needing more because it's basic but a lot of Italian cuisine can be quite basic. What makes these dishes amazing is the quality of ingredients. Fresh homemade pasta. Fresh basil. Fresh tomato. Fresh garlic. Etc. Unfortunately it's difficult to get the original concepts to come through beautifully with our modern American ingredients and lifestyles.

I'm feeling old. The vodka pasta was a staple of 80s cuisine, here in Italy: penne alla vodka. With a twist: other than heavy cream and tomato paste, the original had pancetta, too. Bacon cubes, like carbonara. The butter here doesn't give flavor, only greasiness. But, even with pancetta, works more because the novelty of vodka in pasta than actual being good. You know, the 80s. Variation NOT for Erin: instead of pancetta, salmon, another 80s ingredient. Or shrimp.

So, I grew up in Mexico (keep reading because you can recreate it in the states too at a Hispanic/Mexican store), and I would go and buy a bag of Rancheritos and add the pickled juice of pickled jalapeños to the bag with lime juice and OMG my mouth it’s watering just thinking about it lol. So good! Rancheritos are basically a tortilla chip seasoned with something, you add the pickled juice and crush the bag contents and then lime juice. Eat it with fork or two fingers…pretty damn tasty!

I used to add hot sauce or siracha to my popcorn. I don’t remember where I got the idea but I think it’s because my cousin used taco seasoning. And I was really into siracha for awhile. But there’s a Trader Joe’s pickle flavored popcorn now and you could get that and just add hot sauce. I would add a little dot of siracha on every piece of popcorn as I ate it so it wouldn’t be soggy. My friends thought it was weird at first but then they copied me lol
In canada we do have dill pickle seasoning specifically for popcorn and it's delicious 😋. We also have both regular dill pickle chips and spicy dill pickle chips so dill pickle popcorn is not a stretch.
Amazon sells a dill pickle salt... And its amazing.. I could see that being great on popcorn.. Or even using a chilli lime season on popcorn too with salt... Yum
