Today’s video, I’m sharing some of the things I do before I travel and our simple and quiet advance birthday celebration at home.

Eggs Benedict
Ingredients for the Hollandaise Sauce
3 egg yolk
1 tsp dijon mustard
1 tbsp lemon juice
1 tsp cayenne pepper
pinched of salt
1/2 cup of melted unsalted butter
4 Brioche or English muffin (split)
4 slices of Ham
Salad
4 Poached eggs
Chopped chives
-Fill the sauce pan with about an inch of water.
-In a glass bowl, combine egg yolks, lemon juice, dijon mustard, salt and cayenne pepper.
-Cook the mixture to the sauce pan, whisking constantly,
-Reduce heat to very low and very slowly add the butter while whisking constantly
-Remove form heat and set aside
-Warm the brioche or English muffin
-Assemble the eggs benedict
-Top the brioche buns with salad, ham and poached eggs
-Drizzle with hollandaise sauce on top
-Garnish with chopped shives
-Enjoy!
Carrot Cake Recipe
Ingredients:
300g shredded carrots, 4 eggs, 300g of brown sugar, 1 tsp vanilla extract, 200 ml vegetable oil, 250g flour, 2 tsp baking soda, 2 tsp cinnamon, 1/2 tsp salt.
Cream cheese frosting:
_ 115g butter, 200g of cream cheese and 375 powdered sugar
Instructions:
Preheat the oven to 340F
-Make sure that all the ingredients are at room temperature
-Shred the carrots and mix sugar, eggs, oil and vanilla. Mix the ingredients well
Add the dry ingredients, flour, baking soda, cinnamon and salt. Mix together well
Divide the batter between 20cm line and greased cake pan and bake for 30-40 minutes.
-Cool the cakes in the pan for 10 mins before transferring to cool completely.
Cream cheese frosting
While the carrot cake is cooling.
In a stand mixer or a bowl, add the butter and beat in medium speed for 2-3 minutes.
Add the cream cheese and beat for another 2 minutes.
-Add the sugar in thirds and mix well.
_ Place the frosting in the fridge for 30 minutes or when you're ready to decorate the cake.
Enjoy!

Thank you for including the recipes. The spinach/mashed potatoes recipe reminds me of colcannon that’s usually made with cabbage and mashed potatoes. A restaurant here in Indianapolis makes it with cooked, unmashed spinach & mashed potatoes. Love eggs Benedict. Will have to try it with brioche instead of English muffins. I’m sure you’ll have a great time in Paris checking out the cafes and people watching. I clean house before traveling as well. Have a wonderful vacation!

Love this! Totally agree about everything clean and in order. Our last trip we came home and came down with the plague just as we got home thankfully. 3 weeks recuperating but everything was in order and it felt so good. Have a wonderful time in Paris together!

Dear Jen! First of all I wish you and your husband a very happy birthday and all the luck in the world, ☮️ and happiness!🌹😍 today I was really touched by watching your video, to see a couple that appreciate each other, so lovely! Last time I was in Paris was beginning of December last year, we live at the French border and it only takes us 1 hour 50 minutes, so we are there a couple of times of the year! Our beloved place to go is the Marais quarter with beautiful little shops, cafés and restaurants or the Jardin de Luxembourg….you must also see Galerie Lafayette, you will love it…. Buy yourselves a carnet for the metro at the beginning of your trip, it helps to save money! I wish you a wonderful time in the city of love and nice weather☀️ see you soon, lots of love from Iris and by the way, I will prepare your salmon dish this week🥰
Hello Iris, thank you once again for your heartwarming comment. It means a lot to me. We went and see Galerie Lafayette and did some shopping there. We didn't use public transportation when we were there since our hotel is right next at Champs Elysees and we enjoy walking around the city.

Happy birthday to both of you! A vacation is always good to change the routine and when you come back home, you truly appreciate it more :) How long is the distance between your place to Paris ? I myself prefer travelling by car, unless it's not feasable because I like to look at the view, stop here and there. Parlez-vous français ? Paris has many beautiful ''bistros'', and is well known for its vineyards. et plusieurs endroits où déguster le vin et le fromage. It also has beautiful architecture and can be very romantic. Enjoy your trip and take photos that you can share with us once you return. Peace and love to both of you.

I've tried a few of your recipes, and they've always turned out so well! I tried pairing salmon with a cream sauce pasta tonight (inspired by one of your recipes!) and it was delicious even though I would have never thought to put those two together.
I've been inspired to try hollandaise again thanks to you :)
