Going back to your attempt of growing potatoes, a thought might be to cover the soil as much as you can to try to keep the soil as cool as you can may contribute to a better potato. This is just a hunch on my part. The same for other root crops such as beets, carrots, and radishes. But maybe it is just too warm/hot there to make it work. In my area the ground actually freezes in winter, therefore it only warms up so much in our shorter growing season. Good luck.
To maximize your companion planting, aim for plants from at least 4 different families (and if you can, 10 diff species) to unlock quorum sensing in the soil microbiome which will make the plants cooperate more than compete

Squash la it maupay. No applications whatsoever, organic or otherwise. Makuri kasi kay once a week and half day la ak didto. Myda ghap kami semi-syntropic tree lines but bago pa la talaga. Waray pa gud makikita but gudti na coconut and saging. And halos waray ako pictures. Bisan intention ko magstart ghap channel prmi ak nangangalimot pagkuha bisan pictures man la

Look up the Ruth Stout method of planting potatoes, which is basically just a thick layer of hay mulch to cover the potatoes

We use a grass cutter in some parts. And yes Rocco eats most of our grass hehe... He likes it so much. I guess there's no Carabao in the US?
