A square of pastry, half filled with currents, knobs of butter on top and sugar, the other half of the pastry folded over and sealed, baked and cut into squares after baking, sugar sprinkled on top of the eggy wash before baking 😊 Takes me back 55 years
My aunty used that recipe too and I still have the book we always went round to her house on a Friday night and had this and a jam version and I loved them both , memories 🥰

I am not usually a currant /raisin lover but in a Chorley/Eccles cakes they are different. One of my favourite snacks with a pot of tea. I am a Yorkshireman but I take my hat off to Lancashire for this wonderful home made snack and what a great job you did of them, nice and simple anyone can make :).
My favorite cookie growing up was my mother's Raisin Filled cookies using a boiled raisin filling and a rolled lemon sugar cookie crust. I'll be trying these as they're less sweet

My mum made this frequently as she prepped and cooked meals and desserts for the week as she worked full time. Bottom cooked cake was what she also called it.

These look so good. They're a great Lancashire favourite, I actually prefer these to Eccles cakes. My grandma made 'squashed fly cakes' often, but for occasions like Christmas and Easter, she would add a disc of marzipan, now they were divine.
Supeerb. Just made them and eaten one. More eccles cake than the CHorley cakes I once made before or bought - much less fruit awkwardly (homemade vrsn) rolled into the pastry. This was easier and great as def using home pastry not shop bought flakey/puff pastry as would with eccles cakes. Thanks

Eating cheese with a Chorley cake is a weird Yorkshire quirk. As someone born in Lancs, we always had these with a thick layer of butter spread over the top. Never with cheese. Also, always made the filling with dark brown sugar, not white.
The way Chorley folk eat these is NOT with cheese ,, but they DO butter them ! .. .. The Chorley cake also has the fruit slightly more in the pastry too ! Eccles cakes are pockets of glorious fruit , while Chorley cakes are dryer , with a little less fruit . hence the butter on top ! But those look delicious ! .. Ps ... When going to Chorley market my mam always brought bac Chorley cakes as they were her favourites .
The serving with cheese seems to be a northern thing - I never want Christmas cake without some cheese with it. Though I must admit, these are good with custard too!

The serving with cheese seems to be a northern thing - I never want Christmas cake without some cheese with it. Though I must admit, these are good with custard too!
