The first part of "sink in and out fold" @7:44 is the fold you're struggling with (disregard the additional steps that start around 8:50) Hope this helps!

She made a crease on the other side. Fold one side. Undo and fold the other side exactly how you did the first side. Everything should be equal on both sides ☺️ I said sides a little to much hope I didn't confuse you!
