    The varietal with the strongest Pyrazines is Carmenere, I have it in my vineyard and its always extremely green even when super super ripe and has tons of pyrazines. Cab Franc has pyrazines, Cabernet Sauvignon has pyrazines, Sauvignon Blanc has pyrazines to a degree.

    So are pyrazines amplified or reduced in grapes that are more exposed to UV light?

      The UV light degrades naturally occurring pyrazines in the grapes.
