Polite and helpful competence is the most a guest should expect from a server. If they want to be "entertained" they should go to a dinner theater.

Silent Service? Never heard of this before. Good to know. A lot of places don’t sing Happy Birthday. No ketchup or mustard on the table but the server brings the condiments after the order seems normal to me… Worse, not tipping your server? Stay home.

It used to be common knowledge that "Happy Birthday" was copyrighted. No public service provider could have employees sing that particular song without having to pay a small amount of money to the owner. That's the reason so many chain restaurants had their own birthday song, if they had their servers sing.
I don't know if the urban legend is true, but it was well-known.
That customer wanted to be the center of attention and was miffed because she wasn't. She wanted a high-end restaurant to disturb other diners so that her table could be the center of noise and activity, not at all caring for the people who were there for other reasons.

Silent service is the first kind I learned. It was hard to work a “fun” restaurant after that. Many prefer and tip very well to be left alone without their conversation interrupted. Then again those people also know where to place their silverware to indicate they’re finished eating.

I appreciate servers jobs. They aren't easy. How the heck do they know what each and every person wants? Everyone is different. You have to be good at reading your customer and sometimes they might get it wrong. Being able to request silent service (for restaurants, hair appointments, etc.) makes sense, but if it's not posted or explained anywhere I can see why it might confuse someone. Even just a "have you dined with us before? No? Just so you are aware we practice Silent Service to give you an experience without the intrusion of the staff into your meal. Do you have any questions before we seat you?" could be a game changer for first time diners. I've heard of it being something you could ask for at upscale places, but this would be my first time encountering it being mentioned as the default. 🤔

The service starts out normal like any other restaurant but after the initial greet and taking orders we don’t do all that “still good over here” stuff. We just do automatic refills and anticipation of guests next need and just do it without a convo or question about rather they want it or not. We can clearly see when people are done eating. Kinda sounds to me like the server got screwed out of a tip because of the training they received… there’s no mention of how the server is compensated to make up for the lost tip money from people who feel like it’s weird to be so stubborn as to not ask something basic like “May I take this plate for you?”. No happy birthday song is completely reasonable, but obviously some customers are going to feel uncomfortable if someone is standing over them hovering their hand near their plate… and the customer’s poor experience is going to get taken out primarily on the waitstaff via bad tips so, because they have to pay full price for the meal regardless.
