Especially at this time of year, when you can get local tomatoes (or grow your own) it is best not to refrigerate tomatoes. The cold affects their flavor at the only time of the year they really have any. I bring tomatoes to work with a serrated knife. I think it would be nice to add some cucumbers, too. That dressing sounds amazing!
If you added chickpeas to the salad you could also make an aquafaba “mayo” for the dressing too. My husband can’t have yogurt because he’s lactose intolerant. We like mayo but don’t always have it on hand.
@@mikimisteinberg4016 I actually wrote this recipe for a blog I’m creating. 1/2 can of garbanzo beans 3tbsp of reserved liquid from the beans 1 tbsp lemon juice 2 tsp Dijon mustard 1/4 cup avocado oil 1/4 cup extra virgin olive oil Salt and pepper 1 -2 cloves of garlic grated (optional) Using an immersion blender, blend the beans, reserved chickpea liquid, mustard, lemon juice and garlic (if using) until smooth. With the blender tip at the bottom of the cup, pour the oils on top. On low slowly raise the blender until the oil starts to incorporate then mix until an emulsion has formed. Stir in the salt and pepper with a spoon.

I would strongly suggest you keep the lettuce chopped in a separate container and then add right before serving for leftovers. Soggy lettuce is a no go for meal prep.
Maybe 28 grams of protein and I’m sure it is delicious but with pasta along with the garbanzo beans will make it very high in carbs and unfortunately I am having to count carbs and keep them lower. It is good for those who don’t count their carbs. Thank you for sharing.

While they do wilt a bit, because I am using romaine hearts - they manage to retain come crunch!

It's definitely best fresh as the lettuce will get soggy as the day's progress.
Save a portion of the romaine undressed and then add it in the later days of eating.
