Times have changed! I had to laugh when she presented it as a "budget" cut. Now everyone wants it. But hers is still the best ossobuco recipe I've ever made. I highly recommend it.
Veal shank used to be very cheap. It has become insanely expensive for some reason. It is like $9 a pound where I get it, so I hardly ever make this. Ox tails will also work. But the classic citrus flavoring is great. Not everyone likes it though. Feedback I got from someone when I made it was that it tasted like a air freshener.
I'm sure once people became aware of ossobuco, meat producers realized they could charge top dollar for what's otherwise a cheap cut. Price gouging, nothing else.
It’s more commonly made with beef shanks in US now, as there’s widespread opposition to eating veal. And beef shanks are inexpensive-I got some recently for $8/lb.
I made this tonight and wow was it good. I made it with beef shanks instead of veal. The subtle notes of orange and lemon is definitely a game changer. The leftovers will taste even better tomorrow!
@@Tiger-Heart Oxtails will take a LOT longer to cook. Probably 8 hrs., unless you have a pressure cooker, which is the best way IMO. If you have a chance to pick up an old "Presto" pressure cooker, they are fantastic, and you can still get parts/new rubber seal etc from Presto.
All meat is terribly expensive these days, and especially veal, which a lot of folks don’t want to use because we now know how they treat the calves to get them fattened. Has anyone made this with a meat other than veal? This recipe looks and sounds so good. She was such an inspiration!
She mentions there's a French version and that is the version she actually does in the video, Ossobuco is easier to say and more popularly known, so they used the name for the episode.

@@michaelcornett444. Same with chicken wings
@@MiDeb Good point!
She's amazing. Teaching about meat / butchering, cooking technique, and kitchen equipment all in under 30 minutes in one take.
My father loved her and listening to this takes me back to my early childhood. Thank you.

Absolute legend, love you Julia
A classic dish, which I need to make again soon !
Good GOD that looks incredibly delicious (of course it does, Julia Child made it)!!!
It is, it is! These days, I'd say it's an "occasion" dish. But well worth the effort and expense!
I thought veal...well that's not really applicable now, but blimey... again... non stop tips , all done with humility . Not one word wasted. Respect.
Why wouldn't veal be applicable now?
Much harder to get, not really a "budget" cut like it was at the time of filming.
Shame the wokey wokes destroyed all the great foods in the name of dumbasspitidy
I learn more from one Julia Child video than from the entire repertoire of every other celebrity chef. Maybe with the single exception of Keith Floyd.
Absolutely Awesomeness. Yummm she was fabulous
I've done this similarly with veal, beef, and lamb. I like to top it with a fresh gremolata that makes it pop with freshness.
Also delicious made with oxtails
Well heck! I thought it was always ox tails. Didn't even know it could be veal shank. Thanks Julia!
My mother, who was from Britain, cooked it with oxtails all the time. 😋
I've used ox tail and beef shank as well.

17:40 $0.80 for a bottle of wine in 1966 would be $7.60 today in 2023!
White vermouth! Ive been using red wine all this time,😊
Delicious!
My nana made this. I never have.

You can use beef shank or oxtails to do it (beef shank will take a little longer to cook).
ossobuco: "bone hole", i.e., the bone marrow
Curious why she picked an Italian dish. Was she running out of French things to do by the time she got to season six?
The French cook it. It’s a classic. No accounting for ignorance.

This comment is a bit off-piste for an osso buco recipe! Food and entertaining is the only agenda I see!
