Recipe: Stuffed Portobello Mushrooms
Ingredients:
Portobello Mushrooms - 3 Qty
Mix bell peppers - ½ cup
Onions - 1 medium - Finely chopped
Garlic - 1 Tbsp. - Finely chopped
Green chilies - 1 Tbsp
Paprika- 1 tsp.
Parsley- 1 tsp.
Cumin Powder - 1 tsp.
Bread Crumbs - 2-3 Tbsp.
Ricotta Cheese - ½ cup
Salt as per taste
Oil as per requirement
Parmesan as per requirement
Method:
In a pan, add olive oil, finely chopped onions, garlic & green chilies. Sauté well.
Add in your bell peppers, salt, paprika, parsley, cumin powder & mix well.
Take out the filling in a mixing bowl & add in the breadcrumbs, ricotta cheese, dash of olive oil, black pepper & Parmesan cheese as per requirement. Stuff your mushrooms with the filling.
In a pan add olive oil & place the stuffed mushrooms in it & cover it with a lid for 15-20 mins. on low flame.
Serve with a garnish of parsley.
