I hate all these comments saying that they were having a private conversation and that she shouldn't have filmed this when it obviously not private. I appreciate that everyone is concerned about their privacy but at that time it didn't seem like they wanted to keep things that private.
I think that they knew the camera was recording but thought they were whispering quietly enough that the mic couldn't pick it up. This wouldn't be the first time they underestimate the sensitivity of a mic. But still, they were at a convention, I'm pretty sure, so it's really not a place they'd expect people to not be videoing them.
Destiel is canon. It's canon in the writing and directorial decisions Jensen has made in Dean/Cas scenes. It's Canon in Cas telling Dean he loves him. It's canon in Lucifer using Cas to lure Dean in and open the bunker for him. It's Canon in how extremely excited and proud Jensen is about episode 15.18. it's Canon in so many ways.

I think at first it was such a defense for the character and himself, is wasn’t “Canon” and ppl were trying to make it that. Jensens always been pretty true with Supernatural characterization and image. (Not in a bad way) Im an OG fan from day one, had my second baby the year the show came out. I have seen them all grow and change so much. It’s amazing to see their maturity grow and change over the years. Also, we have to remember, before Misha came all that stuff was TABOO!!! He Opened a Whole can of worms!! No way, they avoided it and changed subjects if it ever came up, we all know the Sam/Dean thing. They knew it was out there too, they just acted like they didn’t. He’s grown up, realized it’s not going to hurt “Dean”, the show, the Idea or Identity of Supernatural… Everything the CW had told them to Avoid and ignore like the plague. Also, I’m 2005 when the show started, America was NOT as open as it is now, not even close! I’m glad he can be more relaxed overseas! Not trying to sound “judgy”, but even as an American I know they’re way more open and accepting than we have ever been. I’m not a “Destiel” shipper myself, but I’m glad they are comfortable enough to make the fans happy who are! It wasn’t that long ago… this Absolutely was a No Go for Jensen!
