The preparations are divided into two parts: the preparation stage and the assembly stage. Preparation Stage: 1. Preparing Vegetables for Roasting: Cut 4 sweet potatoes into large cubes. Cut off the top of 3 heads of garlic. Place 2 tablespoons of olive oil (Shaman "Shaman", Shm'nz) and wrap the garlic in aluminum foil. 2. Roasting the Vegetables: Place bell peppers (mixed colors) on a baking tray. (7 red bell peppers, 2 green, 8 orange, 3 yellow) Add 2 onions and 2 tomatoes. Pierce 5 eggplants with a fork and place them on a wire rack for baking. Place the garlic, wrapped in foil, near the eggplants. On another tray, place 14 hot peppers and the sweet potatoes we cut, drizzling 2 tablespoons of olive oil over them. Place all the vegetables in an oven preheated to 180°C (350°F) on turbo mode for 1.5 hours, until the vegetables are roasted well. 3. Preparing Raw Vegetables (Cabbage): Remove the core of the cabbage and slice it thinly. Wash the cabbage in sterilized water and drain the liquids. Layer the cabbage and sprinkle salt between each layer (approximately 2 tablespoons of salt in total). Let the cabbage sit for 30 minutes to 1 hour to release the liquids. Note: Do not use the liquids that came out of the cabbage. 4. Preparing Vegetables for Peeling: After roasting the vegetables, place parchment paper and aluminum foil over them to make peeling easier. 5. Peeling the Vegetables: Remove the stems and seeds from the bell peppers (do not peel the skins of the hot peppers). Peel the eggplants and remove the stems. You can remove the seeds or leave them (according to your preference). Peel the onions and tomatoes. 6. Final Preparations: Coarsely chop the onions and tomatoes. Sauté mushrooms in 2 tablespoons of olive oil. Slice 2 bell peppers from each color into strips. Chop the remaining ones finely. Chop 4 hot peppers finely and set the rest aside. --- Salad Assembly: 1. Mashouiya Ingredients: ⅓ of the roasted eggplants, chopped 2 hot peppers, finely chopped 2 red bell peppers, finely chopped 1 orange bell pepper, finely chopped 3 cloves of roasted garlic, chopped 1 tablespoon salt 1 teaspoon black pepper, ground Juice of half a lemon 3 tablespoons olive oil Instructions: 1. Chop all the ingredients finely. 2. Add salt, black pepper, lemon juice, and olive oil. 3. Mix well. --- 2. Bell Pepper Salad Ingredients: Bell pepper strips 3 cloves of roasted garlic, chopped ⅓ of the chopped hot peppers ⅓ cup chopped cilantro 1 tablespoon salt 3 tablespoons olive oil 2 tablespoons rice vinegar Instructions: 1. Mix all the ingredients well. --- 3. Saloniki Salad Ingredients: Half of the chopped bell peppers ⅓ of the roasted eggplants, chopped ⅓ of the roasted hot peppers 3 cloves of roasted garlic, chopped 1 teaspoon black pepper, ground 1 ½ teaspoons salt 2 tablespoons rice vinegar 3 tablespoons olive oil ¼ cup chopped parsley Instructions: 1. Mix all the ingredients in a bowl. --- 4. Baba Ganoush Ingredients: 2 cloves of roasted garlic ¼ cup tahini 1 teaspoon salt Juice of half a lemon ¼ cup water (gradually) Remaining roasted eggplants Instructions: 1. Place the roasted garlic, tahini, salt, and lemon juice in a bowl and mix well. 2. Gradually add water and mix until the mixture is smooth. 3. Add the remaining roasted eggplants and mix well until the eggplants are coated with tahini. 4. Finish with a drizzle of olive oil and garnish with chopped parsley. --- 5. Sweet Potatoes in Chili Ingredients (for sauce): ¼ cup sweet chili sauce 2 tablespoons date syrup (Silan) 2 tablespoons olive oil 3 cloves of roasted garlic ¼ teaspoon salt Ingredients (for mixing): 1 tablespoon white sesame 1 tablespoon black sesame Instructions: 1. Mix all the sauce ingredients in a bowl. 2. Add the roasted sweet potatoes. 3. Add the white and black sesame seeds. Mix gently until the sweet potatoes are well coated in the sauce. --- 6. Cabbage Salad Ingredients: Half of the cabbage (without the liquids) 5 tablespoons sugar ½ teaspoon salt ¼ cup olive oil ½ teaspoon black pepper, ground ¼ cup chopped dill ¼ cup rice vinegar Instructions: 1. Mix all the ingredients in a bowl. --- 7. Coleslaw Ingredients: The remaining cabbage 4 carrots, peeled and grated 1 tablespoon sugar 1 teaspoon salt ½ teaspoon black pepper, ground ¾ cup mayonnaise Instructions: 1. Mix all the ingredients in a bowl. --- 8. Mexican Salad Ingredients: 2 cans of corn (drained and rinsed) The remaining chopped bell peppers ⅓ cup chopped dill Mushrooms sautéed in olive oil 2 tablespoons rice vinegar 3 tablespoons olive oil 1 tablespoon salt 1 teaspoon sugar Instructions: 1. Mix all the ingredients in a bowl. --- 9. Spicy Carrot Strips Ingredients: 3 cloves of roasted garlic Carrot strips Chopped hot pepper ¾ cup chopped cilantro 2 lemons, juiced 1 tablespoon sugar 1 tablespoon salt ½ teaspoon cumin 4 tablespoons olive oil Instructions: 1. Mix all the ingredients in a bowl. --- 10. Spicy Bell Pepper Salad Ingredients: 3 cloves of roasted garlic 3 tablespoons rice vinegar 4 tablespoons olive oil ¼ cup chopped parsley Instructions: 1. Mix all the ingredients in a bowl. 2. Pour over the roasted bell peppers. --- 11. The preparations are divided into two parts: the preparation stage and the assembly stage.
Preparation Stage:
1. Preparing Vegetables for Roasting:
Cut 4 sweet potatoes into large cubes.
Cut off the top of 3 heads of garlic.
Place 2 tablespoons of olive oil (Shaman "Shaman", Shm'nz) and wrap the garlic in aluminum foil.
2. Roasting the Vegetables:
Place bell peppers (mixed colors) on a baking tray.
(7 red bell peppers, 2 green, 8 orange, 3 yellow)
Add 2 onions and 2 tomatoes.
Pierce 5 eggplants with a fork and place them on a wire rack for baking.
Place the garlic, wrapped in foil, near the eggplants.
On another tray, place 14 hot peppers and the sweet potatoes we cut, drizzling 2 tablespoons of olive oil over them.
Place all the vegetables in an oven preheated to 180°C (350°F) on turbo mode for 1.5 hours, until the vegetables are roasted well.
3. Preparing Raw Vegetables (Cabbage):
Remove the core of the cabbage and slice it thinly.
Wash the cabbage in sterilized water and drain the liquids.
Layer the cabbage and sprinkle salt between each layer (approximately 2 tablespoons of salt in total).
Let the cabbage sit for 30 minutes to 1 hour to release the liquids.
Note: Do not use the liquids that came out of the cabbage.
4. Preparing Vegetables for Peeling:
After roasting the vegetables, place parchment paper and aluminum foil over them to make peeling easier.
5. Peeling the Vegetables:
Remove the stems and seeds from the bell peppers (do not peel the skins of the hot peppers).
Peel the eggplants and remove the stems. You can remove the seeds or leave them (according to your preference).
Peel the onions and tomatoes.
6. Final Preparations:
Coarsely chop the onions and tomatoes.
Sauté mushrooms in 2 tablespoons of olive oil.
Slice 2 bell peppers from each color into strips. Chop the remaining ones finely.
Chop 4 hot peppers finely and set the rest aside.
