Thank you again for watching and you have a great question. For many things I will not add cheese to the cooking process. I like to save it to put on fresh just before the dish is served. But for some other dishes, such as lasagna, stuffed peppers, or sometimes manicotti, I will add cheese to the sauce. But what I do is put in the hard end of the cheese (the rind) that is left after any grating or cutting and I let that cook down in the sauce as much as it can. It doesn't always fully cook down and I just remove any buts that are left in the sauce. This is a good way to use all of the cheese and not let any go to waste.
This looks delicious. I hope this is a helpful hint ... I use a potato masher to get the meat for my sauce to that fine, pebbly consistency.
