The apple flavour sounds like acetaldehyde.

Vanilla does good things in a stout, commercially they call it Pastry Stout when you dose it up. Try a batch with vanilla and lactose....

i drink store bought bottles of that coopers stout 2 or 3 times a week, it can be quite variable between batches.
Interesting to know. Coopers used to brew manually in their old Leabrook, Adelaide' brewery but built a new brewery in the 1980s which has have an extensive automation system. However process control isn't everything and ingredients may vary

I'd be interested in your comparison between the two. It's my preferred brew since I moved to Adelaide where it's brewed 45 years ago. To me Coopers has a much fuller taste whether bought in a bottle or home brewed. Even my home brew version isn't bad.
Great video. The beers certainly look wonderful. I have to confess, I love vanilla, you might even say I adore vanilla, but I'm not much for it in beer. But having said that, I sure would happily drink a vanilla stout or porter if offered one (or three!), especially a homebrew. Cheers mate! 🍺
