I am a Kannadiga my mom used to use superfine Soji/Rava and sugar as the sweeting agent. For the Kattina saroo the dry coconut, onion and garlic were barbecued on a naked flame. Whole Dhania, Cumin and Byadgi red chilli were dry roasted and everything was ground to a coarse paste. No Kotmeer leaves were used. Now to make Saambaar using raw coconut paste she used grated raw coconut, kotmeer leaves, kadee patta, two small onions and a few pods of garlic and ground to a superfine patate. This paste was cooked with the seasoning in oil, saambaar masala, imali extract, and jaggery added followed by dal and vegetables or puréed Palak.
as a maharashtrian my aai never added maida in the dough . we make the dough entirely of aata only and dont add maida ,it then not only tasts better but even gets a slight crunch outside n soft inside which feels much nice. dont make it soft ,it isnt any paratha or kulcha or bhatura etc, its meant to be stay different from them . While making puran dont use that white jaggery instead use the one which has dark colour coz it isnt only sweet but has its own flavours to which will surely enhance your experience with puran poli. (this is more tradition n authentic n connected to the roots way of making it )

Nice Sagar. Well in every home Puran poli style differs and so does kata chi amti. In Brahmin families, daal gur proportion is 1:1.5 respectively. Also we don't use any kanda lasun in our meals. Your version is again good ☺️

Use Tour dal and chena dal in equal quantities cook them separately and make puran after making fine paste .the amti is made using tamarind juice and masala without onion garlic.
