In the latest update of project cars 2 (just before it was decommissioned), the steering is working while setting up and calibrating. But when inside the game, it is taking inputs sometimes. I'm looking into the issue and will update once I sort it out.
It depends on the game. The exact kind of control you are talking about, is available with project cars 2 (my previous video on the same topic). In that case, you can specify the linearity and degree of input for maximum lock.

i’ve checked to make sure it is connected and it is, i tried restarting my laptop and opening the monect app before and after launching asseto corsa but the option still does not come up

i had the same problem, first log in pc and cellphone, then link the laptop/pc with the cellphone (app/software pc) ( remote and local connection must be in green circle) . i resolved with this steps the same problem.
That depends on the game you're playing. In some games, we can adjust the amount of rotation per 90 degrees of steering input. For example, Project Cars 2.
While adding key binds, make sure your mobile and PC are connected. Most of the time, if your internet on your mobile is switched off, then hotspot disconnects soon. Check that. Let me know if all good 👍🏻

It depends on what kind of adjustments the game has allowed too. For example,in Project Cars, I can control exactly the sensitivity you are talking about. But in certain games, I don't find that option.

If anyone facing high steering sensitivity issue, try changing 'gamma' and 'filter' in advanced steering settings. It worked for me

Galaxy A12 does not have a gyroscope, instead when you make the steering button make the sensor 'accelerometer'.
