If you will follow these tips, the shami kababs will never break. This is my mother’s recipe which is very authentic and traditional. 1) Always use Beef Boti and not keema. You will get resha from boti only. 2) Add your chana daal with meat. 3) Get the mixture very dry by evaporating all the water. 4) After grinding the mixture, add 3 eggs into the mixture for 1kg meat. 5) Don’t dip your shami kababs into an egg but add the egg into the mixture. 6) If you will deep/shallow fry the kababs, they will inflate and never break.
