The Chinese are comfortable using raw egg. If you are concerned about using raw eggs, then you can poach an egg or use onsen egg --the japanese sauna egg

Or if you don't dare to take the risk, use a raw pasteurized eggs like what they do when making modern mayonnaise. The last time I check, mayonnaise made from raw egg, right? Check out Japanese Tamago Gohan or Sukiyaki which you boil the meat in a hot soup and dipped it in raw egg before you eat it or Malaysia & Singapore Moonlight Hor Fun & Claypot Lou Shu Fun.

Yupp. Cantonese dishes oft include raw eggs. Personal favourite is "yut kwong hor" (moonlight noodles). Salmonella is a worry but you're supposed to mix it all up as soon as the food is served so the heat will partially cook the egg.
It gives an extra umami flavour when you mix the yolk into the rice. Remember to make sure your beef and rice are hot enough to cook the egg slightly :)
@@ronica2623 i know its becouse of the process or handling.. salmonella only exists on the shell not on the egg...(if im making sense. Apologies i have a hard time explaining in english).. but salmonella in asia is not really common..
