Snapper is a Scale fish, which is softer than Catfish , and can fall apart easily if not fried before cooking. Catfish is in the " skin fish " category ( like gillbacker and Kurass etc ) which has tougher flesh and does not fall apart easily. Some people like frying all types of fish before making their curry or stew though.

I must point out (and Im guessing you already know this) is the world has become a much smaller place. If I share this recipe you know what would happen to me? I would get bombarded with ways to improve this dish. Most people now take their friends and co-workers to eat out to share their culture. You want your guests to say everthing was perfect not tell us to add more salt etc. Please think of the new generation most now are of mixed parentage.
So you are saying that the viewers are dumb, they are not smart enough to know when to substitute any ingredient if they want to? sounds like that is what you are saying to me, yet you are saying to add more pepper to other dishes, when you know that many of the other cultures don't consume hot peppers. I have to make these recipes as they have been made forever, the definition of "recipe" is a set of instructions that leads to a particular outcome, it says NOTHING about the ingredients or instructions cannot be changed, someone can of course do that. That is not my job to do, my job is to bring the viewers the recipe in it's originality, because if I don't, they will say " That is not the Guyanese way of cooking that"

you dont use enough pepper... one wiri wiri is barely enough to fry an egg. Use scotch bonnet or tiger teeth.

You can add a dried bay leaf. However, when done cooking, remove and DISCARD as this is a choking hazard.
