Love how you show that good tasty food doesn't need to be cheffy or difficult or contain anything to do with an animal. One thing I'd like to ask is I always drain my chickpeas because the aqua fabia is all thick and gloopy but I've noticed yours looks more watery, am I just buying poor quality chickpeas?

Made this last night. I used sweet potatoes instead of white, and since i didn't have smoked tofu, i sliced a block of tofu, pressed it and marinated in some liquid smoke and sprinkled smoked paprika before adding to the pot. Delicious! Thanks for the recipe! 😋
I love that you’re showing this because this is what I do on a regular basis and what I love about recipes like this is you can easily change the spices to have variety. A little bit of curry powder and tahini poured on top or ginger and soy.

Thank you Derek. I enjoy your videos very much. I went plant based decades ago after reading an article " from the farm to your plate in 6 weeks" . It also shed light on animal husbandry. That was the turning point for me. Growing up iin Mauritius, we had little meat. Our chickens, ducks and turkeys were truly organic from our backyard.and eaten for special occasions. Sadly, my family do not share my feelings; that's their choice.

I've been vegan for 50+ years after I read "Ordeal of the Animals" by Mel Morse when I was in middle school. My Tuscan grandfather (from Lucca) instilled in me the love of food fresh from the Earth and still warm from the sun. Your recipes are uncomplicated and nutritious, and, while he never tasted tofu (as far as I know), they remind me a lot of the meals we ate around my grandparents' table. I have to admit, though, that cooking water going down the drain nearly broke my heart. Soup!

Your baked tofu blocks have saved me! Do mine in the air fryer… two at a time, different seasonings. Always have some protein in the fridge when hungry!
@@MsCValentiner Drain tofu, spread some mayo over the brick. Dredge brick in seasoned nutritional yeast mixture. Air fry for 25 mins @ 350. Perfection.👌
I swapped the mayo version for the vegan yoghurt version. Same seasoning (any seasoning you like, honestly) and then in the oven at 200°C for about 25 minutes or until a crust is starting to form. I then flipped it over and baked another 15 min or so.
Thank god! I love your recipes, but a lot of them are simply not for m busy day with kid. This is PERFECT! I'll do it next week, though instead of carrots I will include pumpkin. I'm sure the little one will love it too. Thank you!
Hey, Derek, you are such a light and source of joy in the midst of some of the nonsense I see on RUclips. Just a suggestion, try putting the greens in a colander and set that into a bigger pot so that you can pour the water/carrot/potato mixture over it and then when you're ready to drain, you can just pull up the colander and have all that stock leftover for another application. Really love all of your videos and the energy you bring to all of your videos. Keep being you!

This is a great "base" recipe. One can add all sorts of flavorings/spices to each bowl to mix it up and change the mood: teriyaki sauce, BBQ sauce, poultry spice, pumpkin spice, curry, Italian sausage spice mix, Japanese BBQ sauce, etc. This is the best way to cook and eat. Absolutely.

Great idea! I've been leaning toward the "stone soup" method to just use whatever is on hand with layers of seasoning. You mentioned rice, also perfect match for any other grains, i keep several prepped in fridge for the week. Thanks for showing how easy it can be!

Hi Derek! I just discovered your channel. I'm a dad and husband who does all the dinner cooking in my house, and shopping. We eat mostly meat in our meals, but both I and my wife want to significantly reduce our meat consumption. We currently have about 3 vegan recipes that find there way into my weekly menu, a tofu pad thai, a thai peanut sauce tofu veggie thing, and the other day a really nice tofu curry. The challenge is my son, who is 7, and a very picky eater. Tne only meals he consistently will eat is pasta with meat sauce, and tacos with meat. I tried a few months ago to sneak some vegetarian taco crumbles passed him and he specifically said he didn't like that weeks taco "meat:". That said, I will be trying this recipe this week. I need to find some smoked tofu, as that looked real good to me. Cheers to you!
you should really try black lentil quesadillas, theres a few recipes out there. what I do is boil some lentils (can use canned too). Then stir fry chopped onions, garlic, tomato, greens like parsley, i add grated carrot too. You put the lentils in and mix it with some tomato sauce, salt and season, let simmer 10 mins to incorporate flavors, you can smash it all at the end with a potato smasher. lay mixture on tortillas with some yogurt sauce/ mayo, lots of cheese, and tomato for some freshness ( tomato makes it so much better) Cook them and voila :)
Yep I would eat that for sure! Looks amazing & quite simple! I have to be honest though I thought this video would be more like “here’s my bowl of oatmeal” Since in my experience we chefs cook (bake) amazing dishes for everyone to enjoy then we go home to a bowl of cereal! 😂 Thanks for another great recipe, I’m still hooked on the eggplant sandwich!

Great idea! I've been leaning toward the "stone soup" method to just use whatever is on hand with layers of seasoning. You mentioned rice, also perfect match for any other grains, i keep several prepped in fridge for the week. Thanks for showing how easy it can be!

Hi Derek! I just discovered your channel. I'm a dad and husband who does all the dinner cooking in my house, and shopping. We eat mostly meat in our meals, but both I and my wife want to significantly reduce our meat consumption. We currently have about 3 vegan recipes that find there way into my weekly menu, a tofu pad thai, a thai peanut sauce tofu veggie thing, and the other day a really nice tofu curry. The challenge is my son, who is 7, and a very picky eater. Tne only meals he consistently will eat is pasta with meat sauce, and tacos with meat. I tried a few months ago to sneak some vegetarian taco crumbles passed him and he specifically said he didn't like that weeks taco "meat:". That said, I will be trying this recipe this week. I need to find some smoked tofu, as that looked real good to me. Cheers to you!
you should really try black lentil quesadillas, theres a few recipes out there.
what I do is boil some lentils (can use canned too). Then stir fry chopped onions, garlic, tomato, greens like parsley, i add grated carrot too. You put the lentils in and mix it with some tomato sauce, salt and season, let simmer 10 mins to incorporate flavors, you can smash it all at the end with a potato smasher. lay mixture on tortillas with some yogurt sauce/ mayo, lots of cheese, and tomato for some freshness ( tomato makes it so much better) Cook them and voila :)

Since in my experience we chefs cook (bake) amazing dishes for everyone to enjoy then we go home to a bowl of cereal! 😂

I love this video. Sometimes I feel bad seeing the cooking channels make so much complicated and fancy recipes as weeknight meals and it doesn't work for me when I try, but it feels reassuring to see a professional chef make something more like what I actually eat.
