- Here’s my confession of what I eat during the week when I want easy, delicious, filling and nourishing. It’s easy to whip together with the techniques shown. Packed with fiber and plenty of vitamins and minerals, oh yea, and protein.
This made enough for 4 LARGE meals and average cost was £5 / $6. Might be more if you buy precut veg or pre chopped greens and still well worth it.
I hope this is of benefit and inspires you to take and make your own way.

CHEAP & EASY WEEKDAY MEAL
1 block extra firm tofu, sliced thin
1 can chickpeas liquid and all
1 big bunch Greens (cabbage, kale, chard) chopped
4 large carrots, chopped
5 potatoes, cubed
1 Onion, julienned
2 cloves garlic, minced
2 chillies, chopped (optional)
Olive oil (optional)
Salt and pepper to taste
Nutritional yeast, garnish

Do you prefer a particular vegan kibble for Frankie? I have 2 hounds that eat my pay check and would love to do what you’re doing. Our greyhound has a sensitive stomach & our foxhound can’t do winged things so we’ve been stuck with beef for both & I’d like to quit contributing to that suffering since I do so for my human family food choices.
Honestly Derek, finding your channel has changed my life. I haven't eaten animal products in over two months, and have been following your recipe videos and using your cookbook. Love how you show that good tasty food doesn't need to be cheffy or difficult or contain anything to do with an animal. One thing I'd like to ask is I always drain my chickpeas because the aqua fabia is all thick and gloopy but I've noticed yours looks more watery, am I just buying poor quality chickpeas?

Made this last night. I used sweet potatoes instead of white, and since i didn't have smoked tofu, i sliced a block of tofu, pressed it and marinated in some liquid smoke and sprinkled smoked paprika before adding to the pot. Delicious! Thanks for the recipe! 😋

Thank you Derek. I enjoy your videos very much. I went plant based decades ago after reading an article " from the farm to your plate in 6 weeks" . It also shed light on animal husbandry. That was the turning point for me. Growing up iin Mauritius, we had little meat. Our chickens, ducks and turkeys were truly organic from our backyard.and eaten for special occasions. Sadly, my family do not share my feelings; that's their choice.

Hey, Derek, you are such a light and source of joy in the midst of some of the nonsense I see on RUclips. Just a suggestion, try putting the greens in a colander and set that into a bigger pot so that you can pour the water/carrot/potato mixture over it and then when you're ready to drain, you can just pull up the colander and have all that stock leftover for another application. Really love all of your videos and the energy you bring to all of your videos. Keep being you!

I love that you’re showing this because this is what I do on a regular basis and what I love about recipes like this is you can easily change the spices to have variety. A little bit of curry powder and tahini poured on top or ginger and soy.

Your baked tofu blocks have saved me! Do mine in the air fryer… two at a time, different seasonings. Always have some protein in the fridge when hungry!

@@MsCValentiner Drain tofu, spread some mayo over the brick. Dredge brick in seasoned nutritional yeast mixture. Air fry for 25 mins @ 350. Perfection.👌
I swapped the mayo version for the vegan yoghurt version. Same seasoning (any seasoning you like, honestly) and then in the oven at 200°C for about 25 minutes or until a crust is starting to form. I then flipped it over and baked another 15 min or so.

I've got a confession (too), I love you Derek Sarno! This is exactly the type of recipe(s) I am looking for! After the last mushroom video I was intimidated. This is way more my style. Although I do love your baked tofu recipes. For me, the easier/simpler the better. Thank you for all that you do. Be aware, Frankie's vignettes really tell the true story. LOL!

Love this! Bit like one of my big pot thick veggie soup/stews but not as soupy! Varies depending on available veg. Freeze and ready when you need a quick mid-week. Would love to find vegan dog food options for my houndies! Frankie looks super well on it!

Derek, you always make my day better. This at first reminded me of Dutch 'stamppot" a meal of potatoes, greens and veg with sausage, I used to make it when I was an au-pair there. Tofu is what I use now. This is perfect, a great base to adapt to what you have on hand, a recipe that's not a recipe. I'm so grateful for your channel. You've helped me in a lot of ways.

I made this today during my work from home lunchtime and it's so good! I'm not quite all the way there with being completely vegan yet but many/most of my meals are now. Am so glad to have found your channel Derek, thank you.
Not a veggie just have not eaten any "meat" in over 50yrs...but some poultry and fish...so glad I found your channel as inspiration to less animal products. Great simple healthy recipe...I would save the veggie broth for some pasta or make the dish into a soup. Love that you clean up as you go along. I do wipe the cutting board, but somehow wind up with ingredients, bowls and pans and packaging to put away when done.

What a wonderful recipe. Simplicity is so underrated. I live in an RV and love the idea of a versatile veggie stew for meal prep…I am a condiment loving girl and I can totally see throwing some bbq or peanut sauce on top with the nooch.😊
