You are lucky, I am still planning my build and my choice is a ryzen 5 5600G and a rx 5700xt, i found a second hand 5700xt for a little over 200$, but that 6800 sounds so good too, but it is very expensive in my country (in terms of exchange rate), but i think i can last for long time with my choice of build.
why would you get a 6700 before a better cpu?? You can't even maximize the utilization. Get yourself a 5600x at least asap. 3600 is a joke, my sub-system is a 4600g with a 5700 and it bottlenecks, the 6700xt I have runs great on the 5600 as it has the L cache to make a difference. Not to be too critical, but it if your GPU isnt hitting 90+%, and your cpu is running over 60% average, you're doing it wrong. Also, not sure of the mobo, but PCIE 4 or bust as well.
Agreed a better cpu would be ideal. This is just from another build I did with a GTX 1070 and swapped in the 6700 xt and 4060 to test with. The mobo is pcie 4 so plenty of room for upgrades.

I love my rx 6800 I got for $370. I think that is the best bang for your buck for 1440p.

as a NVIDIA User, i would say amd is better even with the price and everything
AMD’s price to performance is hard to beat. Depends on if you value the additional Nvidia features or not
Not really sure how you're testing these against each other. The settings used were different for each GPU and game........

picking nvidia in any price point doesn't make sense .
