Fun fact about Linzer Cookies : Linz is a city here in Austria (my dad's actually from there) and here the cutout in the top cookie is usually larger, and shaped like a heart or star. The cookies can also have a scalloped edge, and there are special cookie cutters made for Linzer Cookies. They're made with dough that's more like sugar cookie or shortbread. Very traditional. We call them Linzer Augen (=eyes)
