    My dear sir,
    Excellent illustration (even though I do not like the dish) -- but don't you think using your good quality knives on stone or glass surfaces would rather quickly dull them?

    I would rather use clarified butter than Canola. However, I like to try Coconut Oil instead.

    The bread actually has to dissolve completely. It's used as a sauce thickener, so no one will ever use that amount of bread.
