These were amazing! THANK YOU! I'm finally using my discard and it feels great. I subbed in 50 g raw milk with 30 g organic heavy whipping cream instead of buttermilk bc i didn't have it on hand & i used italian "00" flour and these turned out fabulous!!! I had a tea luncheon at my house and the scones were the star of the show.
Well, yes. There are already recipes with more ratio of butter than mine, so I am sure its fine. My speculations is that it might become a bit messier, so keep the temperatures low.

oh i also doubled the recipe and used a smaller glass mason jar to get smaller scones and i got 19! they still went fast ;-)
