Looks beautiful! Although for the typical sous vide "in-a-jar" cheesecake recipes (I follow ChefSteps'), I've found you can just dump all the ingredients at once into a Vitamix blender and you'll be finished in 60 seconds. Stepwise addition of ingredients isn't necessary.

I used the expandable food saver brand roll. I think it is the standard 11” wide but the sides expand so you can fit larger things in. We cut it to the length we wanted.

Any chance you can give it a go? If it needs to be exactly 70° C, then theoretically you should be able to set the sous vide to exactly the same temperature and just.... Let it be?

We contemplated cutting it out because it did take a long time! But kept it because it was a real learning experience. Glad you thought so too!
