    Wow. 15% on a beer ferment. Lalvin EC-1118 is a beast for fermentation. I'll have to give this recipe a go sometime. I brew beer, mead and cider at home. Nice to hear the cat giving comment as well. 😄

    Omg up to 18%?!? It looks so light I gotta give it a try sometime and for me thatd be the ideal carbonization plus hands down that color is so beautiful

    So I’m a bit late to the party lol. But great video!! Do you use a siphon to cut down on the beer foaming? I’m wondering if you can’t just use a funnel? I don’t have a siphon.

    I'm in British Columbia and mostly, there's Sitka spruce trees (alongside the ornamental non-native blue spruce and Norway spruce).
    Will Sitka Spruce work?

    We have had nothing but rain all spring and summer to about now. Like 5 to 10 C on and off. Now we are in for a heat wave so a nice cold home brew beer looks really jummy! :) I wish there were "taste TV" so i could taste it, it looks so good.. Thanx for sharing as always! :)

    If you have a soda stream you can use it to add the carbonation to your beer when you are ready to drink it. You can also buy a standard soda bottle fitting that can be used with a small CO2 tank to add the carbonation. I found that forced carbonation allows you to use 2 liter bottles which saves a ton of time when bottling. It also gives you complete control and consistency with your carbonation. Additionally it allows you to have more control over the finished product. If you taste your beer and like it but it's not done fermenting, you can bottle it, carbonate it, and put it in the refrigerator to ensure the rest of the sugars don't get fermented before consumption.

    Good job Jen, such a pleasant color too. I remember the spruce tip beer at my friends wedding up in Sitka and it was cloudy if you poured it too quickly. His bottles had a settled layer on the bottom. He called the batch "brew ha ha" and it seemed to be well named. : ) I have a friend visiting for a few days and it is nice to offer a glass of Mead from my latest batch of Pear/lemon. Isn't it nice to know what all is in your glass and its all good? Thank you for posting on the spruce tip beer. Smiling, George.

      @@TheWildYam Hi Jen, I just racked a six gallon batch of pear mead/cyser. It is only eight weeks now but it is ready. Summer temps I guess... Pretty good tasting too. I call mine "Bloop" because thats what it says as it pushes bubbles through the air lock. Smiling, George.

    My dad was from West Virginia and he was always making homemade wire and beer. I can remember beer bottles exploding in our basement.

      It was tasty. If I let it ferment for only a few days, there would be very minimal alcohol. Glad you liked the show.

    I loved your two episodes on spruce beer! I'm looking forward to brewing some myself, but can't seem to find the correct bottles for it. Do you have any idea where I could by some that seal well? Thanks 😊

    Ms. Yam, it's funny how you are so outdoorsy & to do-it-yourself, but the ads that play with your videos are often for swank Las Vegas hotels. It's quite a shock.

    You should have taken an og because there is now way you got 15% abv i have done this 3 times it comes out to 5% every time.

      Ya it is pretty high. There are some beers that can go this high too. It had a nice flavour

      @@TheWildYamSorry to disappoint you, but if you used 3 cups (384 grams) of sugar and 4 liters of water, there is no way that the alcohol can be 14%.
      With that amount of sugar/water you are looking at an original gravity (OG) of 1038 SG. A normal attenuation for a champagne yeast would be about 85%. That gives you a final gravity (FG) of 1006 SG.
      The formula for ABV is (OG-FG)/7.5
      In this case the result will be
      (1038-1006)/7.5 = 4,3% ABV
      It doesn't matter how "powerful" the yeast is if it doesn't have enough sugar to "eat".
      But I bet it taste good tough 😊

    Awesome Looking beer JEN you did a hell of a good job with it the color in beautiful most of the spruce beer i saw was a real dark color, and 14% alcohol is great don't think i ever saw spruce beer with more than 11%, have a good week and looking forward to you're wine tasting lol take care,

    I love the idea of a spruce flavored beer. I don't think I've ever had such a thing, unless hops & spruce are similar tasting. The only trouble I'd have with this whole thing is that I think you've shot way past an acceptable alcohol content for most people. 14% is on the high side for most wines, and I just can't imagine tasting anything else but an alcohol burn at that level. I know some folks have taken the alcohol content sky high with this new generation of "craft" beer makers but I've never found that to be a pleasant thing for the overall taste in a beer. Wine is much more viscous and with significantly more sugar to soften its alcohol content on the palate. I think if you shoot for half that alcohol level next time (7-8%) you'll increase the flavor potential greatly.

      I can do that too, yes. I would ferment it for less time and arrest the fermentation by refrigeration. It really doesn't have a bitter taste like hops would impart. Very dry taste.
