My pumpkin candy always starts getting slimy after like 2 days...do u know why that is? I've been trying to Google the question and nothing comes up...
You know what? I have done it and boiled it for 30 minutes and it worked just fine. It did not taste as good as the one I ate when I was child but I think this is due to the type of the pumpkin I used and not the cooking method. Still, it tasted delicious and crunchy. Thank you for sharing this great recipe that works.

One needs to peel the pumpkin, soak in pickling lime overnight. there is the thorough rinse, cooking of the pumpkin adding the spices, making the syrup. bottling it, and enjoying it. As a matter of fact. I just made mine with a pumpkin I bought in Oct. It is awesome. Mine is tart and sweet with a special spice yours doesn't have. I also add a touch of sourness, and it beats anything I have seen on youtube. now eat that!

If it's not dried properly then it will be slimy I think .

It's called Pickling Lime, it is from the lime stone. You can usually purchase it in the canning section.
