Finally getting around to watching a bit. Planting season is upon me so one of my busy times of year. We don't have many quail around here anymore, due to coyotes and feral hogs. Had pondered raising them but I think sticking to rabbits makes more sense. Not to mention domestic rabbit tastes almost identical to chicken just leaner. I do think I may try this recipe with rabbit or one of our chickens. Maybe in the dutch oven over the firering in the backyard. Had a fella forge me a 6' tripod and an assortment of S hooks a few years ago just for that purpose. Looked really good! Thanks for sharing. TC and ATB, Cris.
Much appreciate you finding the time. That marinade along with the lemon and rosemary will be just fine on chicken or rabbit. I put so much bacon fat in there because there is hardly any fat on that quail. I’ve used it on frog legs as well. Thanks for your time.
