Thirattu paal is done with adding some curd to the milk and after separating the whey water it gets solidified and sugar is added. This is what I have heard of. Your method is very different and should be tasty also.
In the north the Palkova is called - Khova (without the sugar) and is used for many sweets, it can be stored for many months when refrigerated. I think the meaning of the words are self explanatory. (Therati - Paal) and Paal -Khova.

Full cream milk for becoming white the normal 3% milk turned Brown. Moreover if you put sugar much earlier. U will get that colour
