    Hi folks, in this film I'll be slow-cooking a silverside joint of beef along with vegetables and gravy. This is an easy recipe to prepare and is as follows:
    1. Take four carrots and slice them and line the bottom of the slow cooker with them.
    2. Take a red onion and a white onion and chop finely and layer on top of the red onion.
    3. Take the silverside beef joint and wash it before placing it fat side down on the vegetables.
    4. Add on top of the beef joint a teaspoon each of paprika, mixed herbs, cilantro and salt.
    5. Crumble up two Oxo cubes over the beef joint.
    6. Chop up some mushrooms and place them around the beef joint.
    7. Chop up a red capsicum pepper into slices and layer this on top.
    8. Pour 300ml of water around the edge of the beef joint on top of the mushrooms.
    9. Put the lid on the slow cooker and cook on high for one hour and then low for three hours for a medium cooked joint.
    Alongside this I made mashed potatoes from potatoes, butter and milk.
    I served the beef in slices with some mashed potato and the vegetables that were cooked in the slow cooker. The juice from the bottom of the slow cooker became the gravy. This was a really delicious meal and made a great Sunday roast dinner. Cheers folks!

    Hi, can I say a very big Thank you for your advice on cooking a silverside joint, I followed the recipe to the letter and May I say that is the best tasting and most tender piece of meat I have ever cooked in my life and I am 70 years of age x

    was a little pessimistic to start with, but we had it today in the slow cooker for 8 hours, forget pessimism it was absolutely delicious, beef very tender and tasty, veg and gravy equally so, not very often do I have silverside but this method of cooking is for me. THANK YOU!

    Looks lovely. I think with the price of fuel going up, a lot of savvy people will be using slow cookers in the future.

      Definitely, I'm a big fan of slow cooking, particularly in Winter, and that's when the bills will be the highest.

    Trying this tonight, its in the slow cooker as we speak! Only had British casserole veg so have used those underneath and around, but everything else incl. herbs and mustard paste the same. Thanks for the recipe.

    The best way to do mash imho is to put a few peeled cloves of garlic when you boil your spuds. You'll thank me for it! Lol

    Could you help me out with something, e everytime I cook a beef joint in my slow cooker it turns out juicy and very tasty. My problem is when I go to carve it it all falls apart, I cant get 1 single. What am I doing wrong x

      Hi Karen, thanks for the comment. The slow cooker is best for making soft and braised (pulled) meat dishes that fall apart easily. To try and stop this happening you could try using a meat joint that has highly connective fibres (in other words tougher meat). I always get decent results with Silverside. Ask your local butcher for advice on this might be a good idea. I’m not sure if it would make a difference or not but you could also try searing the joint in a pan first to toughen up the edges before putting it in the slow cooker. Also don’t cook for too long either. Happy cooking, I’m getting hungry writing this!!

      @@MossHomeandGarden Hi thanks for your reply! Great tips defo will try searing the meat first. I always cook my meats way too long thats maybe the problem. I never know how long or whether high or low heat 🤣 I just pop it all in and hope for the best lol. Would so love to be able to have nice slices instead of it all broken up

      I wasn’t using the most appropriate knife if I’m honest, think it turned out OK, was a while ago mind, many joints cooked since.

    I have a much more simple recipe. I put silverside in pot of hot water covered then add two tablespoons brown sugar, three tablespoons soy sauce and lastly three tablespoons of golden syrup , bring to boil then shut down to simmer, leave lid on and dont touch for four hours. Awesome (wrap in tin foil) also to have next day on toast with tomatoes.

      @@MossHomeandGarden Cooked on range top. I have it with white sauce and mashed potatoes carrots and baby peas. I am a Kiwi whose both parents where born in the UK.

      @@maljohn1414 Thanks mate, I'm going to have a go at doing this. Visited NZ 25 years ago, Auckland, Rotorua, Wellington and the Coramandel. Lovely country. Mount Ruapau was in eruption at the time.

    There's nothing worse when people don't use salt and pepper everything tastes so bloody awful and Bland and dried out in the oven? That's vegetables in the slow cooker looks lovely and I bet the beef taste good

    Hi again, can i brown the silverside beef with salt and pepper in the flying pan first? give it a nice color? What is the difference between cooking in oven vs in slow cooker? I cooked it in oven before but it come out bit dry, it that the difference?

      Hi Tracey, yes you can seal and brown in a frying pan first, the slow cooker is better for a less dry meat but you need some liquid in there to build up steam. The liquid makes a nice gravy.

    A good tip for mashed potatoes is coffee whitener in a little water instead of milk, unsalted butter, and then a little parmesan, salt to taste. Trust me it's a game changer

      Hi Gary, I didn't have any coffee whitener to hand, but I mad the mash with parmesan, cheddar and cream last night and I have to say that it was outstanding, so thanks for the tip off!

    What size is your slow cooker? I’m hoping to cook this tomorrow for 4 people, but not sure if there will be enough room in my slow cooker to feed 4 pax. My slow cooker is 4.5 litre.

      @@MossHomeandGarden I did the corned beef, but the end result was that it was quite salty.
      If there’s a next time, I will soak the corned beef first.

      @@kiwi57ie I’m not sure if your corned beef and UK corned beef are the same? Ours comes in a tin and would disintegrate if soaked.

      @@MossHomeandGarden our corned beef, is an actual joint of meat, like beef brisket. Definitely couldn’t use the tinned version.

      Hi Tracey, yes, it’s always best to cook it slowly, what you are suggesting seems fine, make sure you have some liquid around it.

      Some do, some don't, I personally don't when I'm cooking in the slow cooker as I like the meat juices to ooze out and the flavour in the liquid to creep into the meat.
