    Why did you not remove that hard fat between the point and flat? Or what do you do with it after you smoke the brisket?

      For a backyard trim, Chef Greg doesn't like to remove all of the fat. It all depends on how thick it is, and this brisket's wasn't too thick! 🔪

    I've noticed Chef Greg using some type of glove under his nitrile gloves. I'm guessing it's to insulate from the heat. What is he using? Thanks!

      Chef Greg uses heat resistant gloves underneath his nitrile gloves. There are lots of great brands available on Amazon!
