For the cast iron smoking question: heat the pan dry. Once it’s super hot then add in avocado oil, ghee, fat etc then your food. Even eggs slide off easily doing this! We now only have cast iron.
I second this! We are only stainless & cast iron. High smoke point oils work best. I use ghee for most dishes, avocado oil is best for me with eggs and things of that nature. Also, I think with steak and some other items, a splatter screen is worth the investment since I like to sear my steak with a really hot pan.
We also do "Rainbow Lunch" in the summer as a tradition with my kids! When they were little I would challenge them to have as many colors of the rainbow represented as possible. That way they were more likely to try new things and get that variety. It made me so excited when you called it a "Rainbow Plate" I was like, "We do that too!" 💚

Taco chili!! 1 lb ground beef 1 onion, chopped 2 (14.5 oz) cans diced tomatoes with green chilies 2 (14.5 oz) cans pinto beans (drained) 1 (14.5 oz) can black beans (drained) 1 (14.5 oz) can cream-style corn 1 package ranch style dressing mix 1 package taco seasoning 1 cup water (or broth) optional DIRECTIONS Brown beef with onions in a medium soup pot. Drain excess grease. Add remaining ingredients, stir and simmer for 20 minutes. If it seems a little thick you can add some beef broth or water. This is great with cilantro and a dab of sour cream!
Yes to cast iron for steaks! I usually purchase Filet mignon or petit sirloin (even if you overcook, they're still tender). My best tips are 1) get a meat thermometer, 2) I don't cook with olive oil - low smoke point - I think Avocado oil is the highest, 3) rest the meat before AND after and 4) finish with Kerrygold garlic herb butter and flaked sea salt.

Pinterest has amazing recipes. I grew up with cast iron skillets and this is what we did growing up. A little bit of soapy water doesn't hurt it. I wash it out with soap and water, rinse well. Put it on the stove on low to dry. This causes the metal to expand a little bit. Once it's dry wipe it down with an oil or fat that doesn't go rancid quickly. You can wipe off any excess with a paper towel. And that's it. It will only get smokey depending on the oil you use.
I have never been good at cooking steak. Then a friend says he's been using the airfryer. Game changer. Comes out great. Juicy in the middle and nicely charred on the outside. 10/10

Rinse the pan/wok little water with a natural bristle wok brush (that won't melt like plastic) to get rid of bits, put it right back on the still hot burner. The water evaporates in a heartbeat. Then I take my dedicated rag for oiling my pans and give it a surface coat like I'm rubbing in sunscreen. The entire process takes less than 60 seconds. Guests are always shocked at how simple and fast this is. Zero need for soap which can set you back if you don't have layers of seasoning built up over months.

Don't put it on max flame cuz once it's super hot and smoking it takes a while to cool down, so let it warm up slow And don't be too worried about how to take care of it, it can take a beating, I've let mine soak too long, prob used real soap on it. Had it for ten yrs and still looks fine.
We call this Poor Man Potatoes. Just a made up recipe. Cut up potatoes, turkey sausage, onions, about 2tbl soy sauce, red chili flakes to however hot you like it, salt and pepper, low heat in a generous 1/2 stick butter till potatoes are tender. Total comfort food!

Cast iron for steak!! It can get hot and Smokey so have the fan on. We sometimes have to open the back door to air out. It’s worth it. We do the oven for 30 min at 300, let steak rest, then fry the steaks for two minutes each side for rare/med rare. Before frying we coat the steaks in mayo (avacado mayo-chosen brand seems to taste the best) I’ve heard you can swap the pan fry then oven. See what’s best for yall. Also, cleaning is easy, we use kosher salt. Get the pan scrapper. Boil water in pan for hard to get off stuff. Comes right off. We season with avacado oil. Happy cooking!

I'm a huge cook and am a massive fan of the app Paprika. If you get a lot of recipes online (particularly like NYT cooking or cooking blogs), it is sooooooo easy and might be worth exploring for recipes before you write them in your book! And for cast iron pans, the smokiness is all based on the oil you use. Find an oil with a high smoke point and it can take higher heat before smoking (like avocado)
That plate looks SO good BUT just a heads up to anyone reading: sourdough has been linked in recent studies to migraine activation. I was baking two loaves a week and wondering why I was feeling worse than ever. Thought it was gluten, had my levies tested, blood work, having migraines almost daily. Finally my doctor saw a new study where the active culture in sourdough has been linked. I stopped consuming it and my migraines went from daily to only one a week. Just a heads up!!! Going to try with another bread for sure

Seems to be due to something called Tyramine possibly additionally histamine. So nice to catch up with you! Your hair looks sooo cute! For the smoky steak issue, look into the reverse sear method. It means you won’t need to sear them in the cast iron for as long so it won’t get as smoky. Especially if you like thicker steak you will have to sear in the cast iron and finish it off in the oven or air fryer, or do the reverse for the reverse sear method. Basically, don’t try cooking a good size steak all the way through in your pan or else you may smoke out your place!
Something we do with our cast iron is we wash it like we do everything else and then we spray it down with oil and dry it on a hot burner, works every time.

I love cast iron for steak in the winter when I can’t go outside to grill 🥩 Here’s an amazing recipe that actually came from hello fresh but it’s Cannelini bean kale and carrot soup. (With heavy whipping cream and Turkey sausage) So start frying your turkey sausage (1-2lbs) in your soup pot, while that’s cooking peel and cut your carrots, cut them smaller but they don’t have to be tiny; I usually do half moon size or you can use baby carrots and cut those (I usually do 1lb of carrots), all while browning and stirring your sausage, then a large bundle of kale 🥬 wash it and then tear it up with your hands into bite size pieces, just kind of go ham with no rhyme or reason tearing it, (I find this is easier than cutting it-also remove stems) wash well and it should be close to a collinder full when torn up and washed, then add both the carrots and kale into the Turkey sausage and about a cup of water and put the lid on, stir every so often and keep cooking until the carrots are soft and kale is wilted, then add in about 5 cans of cannellini beans, (I don’t drain the beans but you can, just if you do, soup will be thinner and you will have to add more water or chicken broth) then one large container of heavy whipping cream, then take about a spoonful of cornstarch and add to about a cup of water, make sure there aren’t any clumps and then add to soup, take one spoonful of chicken bouillon paste to about half a cup of water and same thing; make sure it’s mixed and no clumps. Add to soup. Mix, heat until hot and salt and pepper to taste. I’m telling you it’s so hearty, so delicious and so filling. I’m eating it now actually so I figured I’d give you this recipe hahahaha 🤣🤣 takes about 40 minutes tops to make; maybe less if you do less ingredients. This is an easy recipe to tweak and make less or more of etc. also everytime I say “about a cup of water” etc- I don’t ever measure water when I make this, it’s easy to guesstimate. once you make it once or twice you will have it nailed. It’s so simple. Like spaghetti or something. Ingredients: Kale (large bundle) Carrots (1lb) Turkey sausage (1-2lbs) Heavy whipping cream (large container) Cannelini beans/white kidney beans (4-5 cans) Cornstarch Chicken bouillon paste Chicken broth (large container) if you want to drain beans, I don’t drain.

Great job on the desk! I redid mine recently and bought 15 foot extension cords. They included 12 plugs and three USBs. They’re white and have flat cords that I attached under the desk and then took cords down the legs of my standup desk with translucent tape. I ran the chords under the glass chair mat and plugged in to the wall behind my desk worked perfectly.
I've used a cast iron pan for Steaks for years, after initial seasoning I just wash with hot water and a stainless steel scouring pad, dry well with paper towels snd oil with inexpensive oil, but I cook with avocado oil for less smoking, olive oil will smoke terribly, hope this helps, dont overthink it lol, plus you get iron from cooking in them, loved that delicious looking plate!

I live in an apartment and we have a gorge forman lean grill. It works sooo amazing for steaks and pork chops. Highly recommend honestly. We just make sure to turn on the vent fan and crack a window
With the cast iron for steak in an apt: get the pan hot, tablespoon of butter or oil, sear all sides of steak, put entire pan in oven to finish cooking to temp.
My go to quick dinner lately has been multigrain toast with seasoned avocado, cottage cheese, and an over medium fried egg and some turkey bacon on the side. So good and lots of protein 😋
The absolute easiest and BEST way to cook a steak is in the air fryer!!!!! No kidding! That’s the only way I cook my steaks now!!! I’ve never had such a juicy steak as when I cook it in my air fryer. Hands down, THE BEST!! I spray the bottom with some Pam, season my steak, cook it at 400 and flip halfway through. Depending on how thick the cut is and how you prefer your steak cooked will determine the cook time. I like mine rare so I do 3-4 mins per side and let it rest about 5 mins before eating. Try it!!!! Promise you won’t be disappointed!!!!!!
Sea salt to clean cast iron!! I literally dump some in the pan and use my hands or a pad and scrub then rinse. I bought the big container or Maldon salt and keep in under my sink.
I have that exact same yellow recipe book! I love it so much. It's great being able to reference my favorite recipes (with my preferred spin) without having to go on the internet. Some of my favorite, easy recipes are lasagna soup (many recipes out there online) or white chicken chili (from Budget Bytes).

Good to see you back! Regarding the cast iron - nothing wrong with Lodge but I highly recommend Staub. They have enameled cast iron and maintenance isn't as fussy as with other cast iron. I've had one of their pans for over a year. All I do is hand wash and dry normally and then rub a little neutral oil on the inside ( I use avocado oil.). Heavy yes, but so much easier. I do live in a smaller place and personally haven't had any issues with smoke setting off my alarms. Your hair looks great too! 💜
I always hated the look of cords. I found a cheap hack. I just lay either a white poster board or thin piece of wood painted white (or paint it whatever the color of the walls are) and lean it up against the wall hiding the cords. Easy to get to them If you need to.

I cook everyday and have tested multiple pots and pans. I have tried cast iron and it was not my cup of tea. Recently I bought our place Titanium Always Pan Pro and let me tell you it is the best investment in my kitchen. I literally use it 2x a day. Also is non stick but non toxic. Love it!!
Gonna say something controversial here: use soap to clean your cast iron. As long as you season it by oiling and heating after each big use, it will not rust.
I'm just throwing this out there, but have you thought of putting the steak in the oven? I'm not a grill kind of person but my husband is. When I make steak (sirloin) I will season the steak on both sides and then let it sit for a bit before placing in the oven. I like mine medium rare and the last time I made it I cooked it at 400 for about 8 min on each side. You can always adjust temp or how long it's in the oven to your preference. I just let it rest before serving.

I have my grandma’s cast iron skillet, clean if whole it’s hot , so much easier, also salt as a sour will remove bits but not the season . I apply thin bit of oil after every use/clean . You don’t have to get scorching hot, heat slowly and thoroughly and winner winner chicken dinner.
my husband and i solely use cast iron, wrought iron, stainless steel for cooking. definitely check out wrought iron. its A LOT lighter than cast iron but works just as good, maintenance is about the same. the brand we use is a bit pricy but, for us, the quality has been great. we use solidteknics - the usa ones. they do sell out quite often in their pans.
I am far too lazy to dog through all these comments, so I don't know for sure if anyone talked about the lights. I have those light bars as well! I have one bar velcroed to my wall and I control it with my phone.That company has a TON of light options. We have many from Govee in our house. We have the Tv backlights, lamps, bulbs. Its AWESOME! The tv backlights have changed the game for tv watching. The bars you have a camera option too. There is a little camera you attach to your monitor that transmits back to the lights so it mimics the colors from your screen, like the tv back lights. If you have a lot of lighting from Govee, you can sync all of them! The sensored lights often have sound recognition so they respond to sound if you have it set to that function. Your possibilities are ENDLESS.
If you like the balkan breakfast, then you should try ajvar spread on top of a slice of bread and crumbled feta on top. It's basically roasted peppers, some brands add tomatoes, some add eggplants, some have just the peppers. However it is, paired with feta is match made in heaven

I’m eating it now actually so I figured I’d give you this recipe hahahaha 🤣🤣 takes about 40 minutes tops to make; maybe less if you do less ingredients. This is an easy recipe to tweak and make less or more of etc. also everytime I say “about a cup of water” etc- I don’t ever measure water when I make this, it’s easy to guesstimate. once you make it once or twice you will have it nailed. It’s so simple. Like spaghetti or something.
Ingredients:
Kale (large bundle)
Carrots (1lb)
Turkey sausage (1-2lbs)
Heavy whipping cream (large container)
Cannelini beans/white kidney beans (4-5 cans)
Cornstarch
Chicken bouillon paste
Chicken broth (large container) if you want to drain beans, I don’t drain.

Great job on the desk! I redid mine recently and bought 15 foot extension cords. They included 12 plugs and three USBs. They’re white and have flat cords that I attached under the desk and then took cords down the legs of my standup desk with translucent tape. I ran the chords under the glass chair mat and plugged in to the wall behind my desk worked perfectly.

I've used a cast iron pan for Steaks for years, after initial seasoning I just wash with hot water and a stainless steel scouring pad, dry well with paper towels snd oil with inexpensive oil, but I cook with avocado oil for less smoking, olive oil will smoke terribly, hope this helps, dont overthink it lol, plus you get iron from cooking in them, loved that delicious looking plate!

I live in an apartment and we have a gorge forman lean grill. It works sooo amazing for steaks and pork chops. Highly recommend honestly. We just make sure to turn on the vent fan and crack a window

With the cast iron for steak in an apt: get the pan hot, tablespoon of butter or oil, sear all sides of steak, put entire pan in oven to finish cooking to temp.

My go to quick dinner lately has been multigrain toast with seasoned avocado, cottage cheese, and an over medium fried egg and some turkey bacon on the side. So good and lots of protein 😋

The absolute easiest and BEST way to cook a steak is in the air fryer!!!!! No kidding! That’s the only way I cook my steaks now!!! I’ve never had such a juicy steak as when I cook it in my air fryer. Hands down, THE BEST!! I spray the bottom with some Pam, season my steak, cook it at 400 and flip halfway through. Depending on how thick the cut is and how you prefer your steak cooked will determine the cook time. I like mine rare so I do 3-4 mins per side and let it rest about 5 mins before eating. Try it!!!! Promise you won’t be disappointed!!!!!!
The trick to cast iron is using an oil that has a high smoke point! I use avocado oil and it doesn’t smoke much if at all!

Sea salt to clean cast iron!! I literally dump some in the pan and use my hands or a pad and scrub then rinse. I bought the big container or Maldon salt and keep in under my sink.

I have that exact same yellow recipe book! I love it so much. It's great being able to reference my favorite recipes (with my preferred spin) without having to go on the internet.
Some of my favorite, easy recipes are lasagna soup (many recipes out there online) or white chicken chili (from Budget Bytes).
The meal reminds me of what my little boys call "mini meals" its such a good go to way to eat a variety of fruits and veggies and protein. ❤ Yummy!

Good to see you back! Regarding the cast iron - nothing wrong with Lodge but I highly recommend Staub. They have enameled cast iron and maintenance isn't as fussy as with other cast iron. I've had one of their pans for over a year. All I do is hand wash and dry normally and then rub a little neutral oil on the inside ( I use avocado oil.). Heavy yes, but so much easier. I do live in a smaller place and personally haven't had any issues with smoke setting off my alarms. Your hair looks great too! 💜
I always hated the look of cords. I found a cheap hack. I just lay either a white poster board or thin piece of wood painted white (or paint it whatever the color of the walls are) and lean it up against the wall hiding the cords. Easy to get to them If you need to.

I cook everyday and have tested multiple pots and pans. I have tried cast iron and it was not my cup of tea. Recently I bought our place Titanium Always Pan Pro and let me tell you it is the best investment in my kitchen. I literally use it 2x a day. Also is non stick but non toxic. Love it!!

Gonna say something controversial here: use soap to clean your cast iron. As long as you season it by oiling and heating after each big use, it will not rust.

I'm just throwing this out there, but have you thought of putting the steak in the oven? I'm not a grill kind of person but my husband is. When I make steak (sirloin) I will season the steak on both sides and then let it sit for a bit before placing in the oven. I like mine medium rare and the last time I made it I cooked it at 400 for about 8 min on each side. You can always adjust temp or how long it's in the oven to your preference. I just let it rest before serving.

I have my grandma’s cast iron skillet, clean if whole it’s hot , so much easier, also salt as a sour will remove bits but not the season . I apply thin bit of oil after every use/clean . You don’t have to get scorching hot, heat slowly and thoroughly and winner winner chicken dinner.

Just bought the light bars for behind our woodstove, thank you! Also, you cannot go wrong with cast iron.
my husband and i solely use cast iron, wrought iron, stainless steel for cooking. definitely check out wrought iron. its A LOT lighter than cast iron but works just as good, maintenance is about the same. the brand we use is a bit pricy but, for us, the quality has been great. we use solidteknics - the usa ones. they do sell out quite often in their pans.
Hands down, best way to cook steak in a house without it getting all smoky on high heat is reverse sear and then cast iron. And it’s sooooooo good!

I have those light bars as well! I have one bar velcroed to my wall and I control it with my phone.That company has a TON of light options. We have many from Govee in our house. We have the Tv backlights, lamps, bulbs. Its AWESOME! The tv backlights have changed the game for tv watching. The bars you have a camera option too. There is a little camera you attach to your monitor that transmits back to the lights so it mimics the colors from your screen, like the tv back lights. If you have a lot of lighting from Govee, you can sync all of them! The sensored lights often have sound recognition so they respond to sound if you have it set to that function. Your possibilities are ENDLESS.
If you like the balkan breakfast, then you should try ajvar spread on top of a slice of bread and crumbled feta on top. It's basically roasted peppers, some brands add tomatoes, some add eggplants, some have just the peppers. However it is, paired with feta is match made in heaven
So glad you are feeling better and love the new hair! This is also my favorite style of breakfast/brunch, and I call it 'Forager's Feast' because I'm usually just foraging in my fridge for what will go together in the bowl 😊
If you sous vide your steaks followed by a quick sear on stainless steel, it comes out perfect every time 🤌🏻 we got ours at Costco a few years back
