Why are the stems so thin please ive never seen such thin stalks of celery ? Do they grow bigger if you leave them longer ?

Celery is a heavy feeder. You realy need to pump it full of fertilizer(often highly concentrated or inorganic chemical fertilizers) to get the results you see in American grocery stores. The ones I grow in my backyard are smaller too. If you let them get too big they become tough and fibrous.
