    I put fat trimmings in an aluminum pan and leave them in smoker till wrap brisket and pour renderings on it. Mmm. Urs looks great. Great video !!

    Ive got that same Keter workbench. Sat the smoker on it, a sturdy birdie

      I love that table, it folds up nice and flat for easy storage and easy to set up when needed, it is definitely sturdy, I would trust my smoker on it as well.

      Thanks, it was really good and yes they are my riding gloves but I don’t wear that pair anymore, now they are my grilling/smoking gloves

    I just bought this exact mode smoker, I soaked the wood chips and none of the meat barked up

      I would not soak wood chips. I started that way, but have changed to no soaking. It should bark up.

      I don’t soak my wood chips, I like the way the bark turned out

      Wet wood chips don't smoke, they steam. Probably too much moisture for the brisket to bark up is my guess.

    run your temp probe out through your exhaust to keep from pinching the probe wire circuit

    Do you put your brisket fat side up or down? And did you fill the water pan for the whole smoke?
    I smoked my first brisket for mothers day and it came out just okay. It was a bit dry. I put it fat side up and did not add any water to the pan. Thanks.

      Yes, I put fat side up also and I do refill the water tray, I also spray it with water quite often after the first initial smoke

      It was incredible, It was our Uncle Tom’s brisket rub he used, it was from Texas.

    Did you do anything else to help it bark off cam? Like apple cider vinegar or anything

      No, just seasoned it on all sides, I tried apple cider vinegar once and I don't know if I used too much but you could taste the vinegar and it wasn't very good.

    What was the final internal temperature? I know you wrapped it at 180.

      I don't remember, I am kinda curious now too. I'll go through some of the original videos and see if I can answer that question. I don't think I would let it hit over 200* I'll find out and let you know.
