You should def do the conservationist career with Noelani! You can work from home, clean up the beach, and if you clean it up enough the world will change, there will be more flowers/greenery around, more fish and everything just turns super pretty! I think it'd be super fun 🏖☀🌊

You can only adopt orphan sims I think! I tried to adopt a sim who had alive parents and it wouldn't let me. The RPO mod lets you adopt any sims though! There's some nice features like the adopted sim being able to look for their birth parents and ask why they were put up for adoption etc.
