The Pot of Ice-cream!

- This frozen dessert is my first ice cream creation captured on video. I like the concept of having ice cream in a pot! It's composed of a layer of crunchy pineapple meringue, a coconut sorbet, a pineapple sorbet, a coconut/vanilla frozen parfait, slow cooked caramelized pineapple, and a caramel syrup on top! All of the other elements are crafted out of dark chocolate!

For anyone wondering what that device he's using at 1:34, I believe it's a refractometer. I'm guessing for checking the concentration of sugar dissolved in the liquid. Can a pastry chef shed some light on what he's actually looking for though?

That was my thought.
Pastry chef here! It's a brixometer and it measures the sugar content of sorbets. If the sugar is too high, the sorbet won't freeze properly. I use one at my restaurant for the same reason.

I just want to know how many hours go into making these creations. Everything he makes is absolutely epic.
DAYS.
Sometimes he puts how long it took to create something (usually the chocolate sculptures) and it's always days, and I would imagine he works several hours a day and sometimes he has help, there is a lot of work behind those pieces!
And also how many prototypes of the elements he does before settling on the final design
he is very hard working! I guess because he loves what he does he doesn't see it as work. But is hard work!
Amaury, I really hope you never stop dreaming of ways to make your chocolate even more amazing. You are a true artist.

I’m not sure I like all the quick edits. I like watching the magic happen. Even though I’ve seen it many times it’s still fun to watch.
I think the quick edits probably cater to TikTok users? Not sure. I love watching his videos, but personally find the transitions jarring. Would love to see longer form content that speaks more to the actual creation process.
I can watch him work all day making such delicious food... I don’t think he's made anything that I wouldn't consume. Great talent and skills

I don’t even know what comment to write anymore to say how amazing he is. Extraordinary, exceptional, gifted…doesn’t even come close.
It looks real! If someone saw that master piece sitting on the counter, they would think it was an actual pot of ice cream. If anything … the trickiest part would be guessing there’s ice cream on the inside, since it has the glazed mangoes on top!
Still fascinated today as I was the first time I came across his art... his WOW factor is always on point!! ❤❤

I don't get tired of watching this guy. He is absolutely incredible at what he does with chocolate. Pure artwork that we can eat!! It's done with the specialty of an ingredient that we always have a craving for: and that would be chocolate. Wonderful amazing work!!

Is checking the concentration of the syrup crucial to getting a nicely set ice cream or fruit foam? This concoction looks really fabulous.

It's to check the sugar content. If there's too much sugar, the sorbet won't freeze right and it'll never harden.

I'm just thinking about the fact that all of that is made buy him. I mean everthing is from fresh fruit. He doesn't just get store bought stuff as filling. Like syrup or coconut milk. He makes it himself that's amazing!!
Get my wheelbarrow ready because that would be my only way to get home after eating this. I have to watch this several times just to see him make the pot and spoon! He really has very few peers.
