    Hi Kathy. I have a general question about tahini. How do you store it? How do you keep it from going hard (as a rock)? And how do you soften it again?

      We recommend storing your tahini in a cool, dry area away from heat and moisture. Ideally, this would be a pantry or cabinet. If you refrigerate it, it tends to get hard. To soften hard tahini, add small amounts of ice-cold water. ​You may only need a little water to smooth out the mixture; starting with less water is best, and you can add more as needed.
