Pork and Italian sausage Ragu

Ingredients:
Pork shoulder butt 4lbs
Italian sausage 8pcs
Roma tomato 12-14pcs
Carrot 1
Celery 4-5pcs
Onion 1
Fresh garlic 10 cloves
Tomato paste 2tbsp
Red wine or chicken stock 3-4cups
Fresh thyme
Bay leaf
Italian seasoning 2tbsp
Dried oregano 1tbsp
Pappardelle pasta or pasta of your choice
Salt and pepper to taste
Soften butter
Parmesan cheese or cheese of your choice
Olive oil or regular oil
