Great follow up video good to see. I'm in middle of upgrading an old 6th/7th gen system might have a spare mb and i5 going spare for it in coming weeks, do you have an email contact where I could arrange to send you the parts to donate for the channel ?
Would you need a better than stock cooler with the i7 particularly with the K if you were going to overclock ?. I think the problem with the Xeons is that it's difficult to figure out what you should be comparing them to. in terms of the i5s and i7s. A last point is that it might be worth giving the %increase in the 1% lows as I think that will have the most impact on gameplay perception with these generally modest CPUs.
If you are overclocking the i7 a then yes you would need better cooling then the stock cooler but running them at stock speeds should be fine on stock cooler
