My secret's out with black sambo😪 i made this during a reunion with my relatives in manila ...it was a hit and they kept asking how i made it.heheh.. anyway i'm sure taga bacolod talaga yung nagturo sayo chef kasi dapat knoxx gelatine talaga..kung gulaman, pwedeng mag split yung layer at magiging basag2 yung gulaman.
My tips on making it..let it set 1st to cool before you freeze..setting the gelatine will make it stable enough to stay in the buffet table in good form... if you just froze it to rush the process..make sure to eat it asap..or bring it back inside the fridge. Also i dont unmold it..unless i have a special gelatine mold..i just serve it in clear cups, or a glass baking dish. Good luck trying to dissolve the cocoa powder..it takes time..and use a sieve to filter out clumps of bitter cocoa... i also cool it a bit before i pour it in the cream layer, i had a disaster after pouring piping hot cocoa on the white layer. Hope this helps..and more power to chef rv. I love your shows tbh.
Yes, original recipe is from Bacolod. Never heard yan sa mga taga Manila. Every time I made that here in UK is always a hit. Bristish friends loves it. Filipino friends from anywhere in the Philippines na hindi taga Bcd or Iloilo d nila alam yan Black Sambo.

Chef… just a tip for unmolding gelatin based desserts. Natutunan ko po ito sa Japan . Magbasa at magpiga ng kitchen towel, painitin sa microwave for a couple of minutes at idampi sa mould. Kung nakataob na ang mould sa serving dish, at idampi ang hot towel, kusa ng kakalas ang dessert sa mould. Di na po need ng knife. Subukan nyo po. Me i also preferred margarine.. kz kahit hindi mo ilagay sa ref very appliable ito.. tsaka di sya agad natutunaw khit mainit ang panahon wag lang sa direct flame heat dhil matutunaw talaga sya haha
for the molds it would be easier to unmold if they were put in a container na pwede ma squeeze. to save your self from heating the bottom. this is a very common dessert here in iloilo. was not aware some people have no idea about it hehe

I first tasted Black Sambo in early 2000 at a birthday party here in Bacolod. It was even on the menu of some of the restaurants. I thought it was a well-known dessert throughout the Philippines. I just found out now na dito lng pala sa Western Visayas popular. Thanks for showing how it is done. It's one of my fave desserts na hindi nakaka umay.
